Mini Cranberry Cakes – Små Tranbärskakor


So I’ve been thinking a lot about thanksgiving recipes, and I must say that I don’t really dare to make anything. Everyone seems to have their own special recipes, and that’s great. I still want to take advantage of the different things that can be bought at a good price in the store. So I got fresh cranberries.

I also got a very fun pan for my birthday from Williams Sonoma, which I’ve been wanting to try for a longer period of time now. This resulted in super cute mini-cranberry cakes. The batter is a traditional spongecake batter. The result was very good – although, they need to be eaten the same day as they are made.

Så jag har tänkt mycket på thanksgiving recept, och jag måste faktiskt säga att jag inte riktigt vågar laga något. Alla tycks ha sina egna recept, och det är ju toppen. Men jag vill ju ändå ta vara på alla de råvaror som säljs i affären just nu. Så jag köpte färska tranbär.

Jag fick också en jättefin kakforms-plåt i födelsedagspresent från Williams Sonoma som jag har velat pröva ett bra tag. Det hela resulterade i supersöta mini-tranbärskakor. Smeten är en vanlig sockerkakssmet. Resultatet blev toppen – de måste dock ätas samma dag om man gör dom pyttesmå.

Recipe / Recept 

3 eggs / 3 ägg

125 g of butter / 125 g smör 

2.4 cups of sugar / 3 dl socker 

2.4 cups of flour / 3 dl mjöl

0.3 cups of water / 3/4 dl vatten

1.5 teaspoons of baking powder / 1.5 tsk bakpulver

1 teaspoon of vanilla extract / 1 tsk vaniljsocker

about 0.8 cups of cranberries / ca 2 dl tranbär

1 tsp powdered sugar / 1 tsk florsocker

1. Preheat the oven to 350 F. / Sätt ugnen på 175 grader.

2. Whisk sugar and eggs fluffy and almost white, melt the butter. / Vispa socker och ägg pösigt och nästan vitt, smält smöret.

3. Mix all the dry ingredients together separately. Add the flour mix to the egg and sugar mix, be careful and add a little at a time./ Blanda alla torra ingredienser i en bunke. Tillsätt mjölblandningen försiktigt till ägg och socker mixen.

4. Add melted butter and water. / Tillsätt smält smör och vatten.

5. Chop the cranberries in small pieces. / Hacka tranbären i små bitar.

6. Mix the cranberries with the powdered sugar. / Blanda tranbären med florsockret.

7. Add to the batter. / Blanda ner i smeten.

8. Use non-stick spray in the pan or thin. / Smöra och bröa en form eller en plåt.

9. Bake in the oven for about 15 min for small cookies, or about 30 min for one big. / Grädda i ca 15 min för små kakor, och ca 30 min för en vanlig sockerkaka.

10. Stick a fork in the cake to make sure it’s ready. / Stick en gaffel i kakan och se till att den är klar.

11. Done! / Klart!

    How do you think this recipe would hold up with different kids of fruit? I like blueberries and apples more than I like cranberries.

    I’ve never eaten fresh cranberries before. They aren’t grown here in Australia as far as I know… they’re beautiful though! We don’t celebrate Thanksgiving either, though I think it’s a wonderful tradition. Glad that you’re getting to enjoy some of the seasonal delights! By the way, whereabouts in Sweden are your family?       I haven’t either before! But they’re actually very good! 🙂 That’s so funny. I’m from Stockholm, so a little more north. I hope you went in the summer.. The winters are very long and cold – specially compared to Australia… Thanks for stopping by!
