Chocolate Chocolate Chip & Peppermint Cookies – Choklad & Chocolate Chip Mint Cookies


For everyone who knows me, they also know my love for mint chocolate. I guess just mint in general actually. I love mint, and I always have. So let’s move on to the cookies! These cookies are DELICIOUS, no doubt on that either. The recipe is the classic Nestlé recipe, with a couple of adjustments, making it all yummy. What I did, which actually turned out really well, was taking out the cookies a little early, so they became soft instead of crispy. I then kept them in the fridge, and it all worked out really well. I hope you try!

Recipe / Recept

1 cup, 2 sticks of butter / 230 gram smör 

2.25 cups of flour / 5.75 dl mjöl

1 tsp of baking soda / 1 tsk bikarbonat

1 tsp of salt / 1 tsk salt 

0.75 cups of sugar / 1.9 dl socker

0.75 cups of brown sugar / 1.9 dl muscavadosocker 

1 tsp of vanilla / 1 tsk vaniljsocker 

2 eggs / 2 ägg

1.5 cups of chocolate chips / ca 4 dl chocolate chips 

3 tbsp of cacao powder / 3 msk kakao

1 tbsp of peppermint extract / 1 tsk pepparmintsextrakt 

1. Heat the oven to 375 F. / Sätt ugnen på 190 grader.

2. Mix butter, sugar and eggs. / Blanda smör, socker och ägg.

3. Add in flour, baking soda, salt and vanilla. / Blanda i mjöl, bikarbonat, salt och vaniljsocker.

4. Add in cacao and peppermint. / Blanda i kakao och mintextrakt.

5. Mix in the chocolate chips. / Blanda i chocolate chipsen.

6. Put in the fridge for about 10 min. / Sätt i kylen i ca 10 min.

7. Spread out small balls of dough on a parchment paper on a baking sheet. / Sprid ut små bollar av deg på ett bakplåtspapper på en plåt.

8. Cook for about 10 min, let cool. / Grädda i ca 10 min, låt svalna.

9. Done! / Klart!


Easy Quinoa Salad w. Sriracha & Lime Dressing – Lätt Quinoa Sallad med Sriracha & Lime Dressing


This recipe is quick, vegetarian, a little spicy and yet delicious! Plate is as usual made by my talented mom Helena Bonnier.

4 servings of Quinoa / 4 portioner Quinoa 

Broccoli / Broccoli 

Tomato / Tomat 

Avocado / Avokado 

Spinach / Spenat 

Feta cheese / Fetaost 

Dressing / Dressing 

2 parts of olive oil / 2 delar olivolja 

1 part soy sauce / 1 del soya 

1 tsp of lime / 1 tsk lime 

fresh cilantro / färsk koriander

sriracha after taste / sriracha efter smak 

1. Start by boiling the Quinoa and broccoli. / Börja med att koka Quinoan och Broccolin.

2. Mix all the ingredients to the dressing. / Blanda alla ingredienser till dressingen.

3. Mix the sallad. / Blanda salladen.

4. Pour over the dressing. / Häll över dressingen.

5. Top off with some feta cheese. / Toppa med fetaost.

Super Good & Healthy Fish Burgers – Jättegoda & Nyttiga Fiskhamburgare


When my brother became a vegetarian, I can’t say I was a huge fan of fish… I liked salmon, but mostly I would stick to chicken. However, over the past year, I’ve barely eaten red meat, and not that great amount of chicken. This summer I was craving fish, even when my brother was no longer at home. This resulted in these healthy and delicious fish burgers! They’re easy to make, quick, and delicious. We ate them with a half hamburger bread, two delicious sauces (I’ll provide the recipe to those too) and some oven roasted vegetables. All in all, a successful dinner!

Recipe (4 servings) / Recept (4 portioner)

7 ounces of white fish / 200 g vit fisk

7 ounces of red fish / 200 g röd fisk 

1 egg / 1 ägg

1 boiled potato / 1 kokad potatis 

3 cloves of garlic / 3 vitlöksklyftor 

chili flakes / chiliflakes

salt / salt 

pepper / peppar 

Chive sauce / gräslökssås 

0.8 cups of sour cream / 2 dl crème fraiche 

3 tbsp of chopped chives / 3 msk hackad gräslök 

a hint of lemon juice / lite citronsaft 

salt / salt 

pepper / peppar 

Sweet chili Sauce / Sweetchili Sauce 

0.8 cups of sour cream / 2 dl crème fraiche 

4 tbsp of sweet chili sauce / 4 msk sweet chili sås 

1. Start by boiling the potato. / Koka potatisen.

2. In a food processor, mix all the ingredients for he fishburgers. / I en mixer, mixa alla ingredienser till fiskburgaren.

3. Shape the batter into burgers. / Forma smeten till hamburgare.

4. Fry on low heat. / Stek på svag värme.

5. Mix the ingredients to the sauces. / Blanda ingredienserna till såserna.

Homemade Chocolate Sauce for “Maräng Swiss” – Hemgjord Chokladsås till Marängswiss


In Sweden, one of our classic desserts (that I’ve written about before) is called “maräng swiss” it basically translates into “Meringue swiss”. The debate is how to pronounce the “swiss” is it like swiss, schwiss, schwish or something else? The one thing that’s for certain is that the dessert includes cream, ice cream, bananas, meringues and chocolate sauce. The chocolate sauce (or should I say syrup) that is store bought is not able to compete with making warm, homemade chocolate sauce! So here comes my best recipe – and please try this dessert…. You will love it!

Recipe / Recept

0.8 cups of cream / 2 dl grädde

0.4 cups of sugar / 1 dl socker

0.4 cups of syrup / 1 dl sirap 

5 tbsp of cacao powder / 5 msk kakao 

1 tsp of butter / 1 tsk smör

1. Put everything in a pot with a thick bottom. / Lägg allt i en kastrull med tjock botten.

2. Bring to boil. / Koka upp.

3. Let simmer for about 10 min or until desired texture. / Låt puttra i ca 10 min, eller tills den blivit så tjock som du vill.

4. Done! / Klart!


Frozen Chocolate & Meringue Cake – Frusen Choklad och Marängtårta


This easy cake looks and tastes beautiful. It can be kept in the freezer for a couple of days, which makes it a no-hassle dessert for when having guests over! The chocolate can easily be swapped for fruits, berries or any other flavor you prefer! Not to mention it’s gluten-free!

Pre made meringue / Färdiga marängbottnar


4 egg whites / 4 äggvitor 


1.4 cups of heavy whipping cream / 4 dl grädde


1 tbsp of sugar / 1 msk socker


200 g of melted chocolate / 200 g smält choklad


berries for decoration / bär för dekoration


1. Whisk the egg whites to a hard foam. / Vispa äggvitorna till ett hårt skum,


2. Whisk the cream until firm. / Vispa grädden relativt hårt.


3. Carefully stir in the egg whites into the cream. / Rör försiktigt ner äggviteskummet i grädden.


4. Crush one of the meringues and add into the mixture. / Krossa en av marängbottnarna och rör ner i smeten.


5. Melt the chocolate. / Smält chokladen.


6. Put the other meringue in the bottom of a spring form. / Lägg den andra marängbotten i botten på en springform.


7. Stir the chocolate carefully into the egg and cream mixture. / Rör försiktigt ner chokladen i ägg och grädd-smeten.


8. Add the mixture to the springform. / Lägg i röran i formen.


9. Put in the freezer for about 4 h. / Ställ i frysen i ca 4 h.


10. Top with berries. / Toppa med bär.

Couscous Salad with Chili Sautéd Eggplant – Couscous Sallad med Chili Stekt Aubergine


Recipe (Serves 6) / Recept (6 portioner)

4 portions of couscous / 4 portioner couscous 

2 cloves of garlic / 2 vitlöksklyftor

1/2 stock cube / 1/2 buljongtärning

2 tbsp of lemon juice / 2 msk citronsaft

1 tbsp of olive oil / 1 msk olivolja

Sugarsnaps / Ärtskidor 

tomatoes / tomater 

cucumber / gurka 

Broccoli / Broccoli

Eggplant / Aubergine 

Chiliflakes / Chili flakes 

1. Boil the water for the couscous with 2 crushed cloves of garlic, lemon juice, stock cube and olive oil. / Koka upp vatten till couscousen med 2 pressade vitlöksklyftor, citronsaft, buljongtärning och olivolja.

2. Slice all vegetables. / Skiva alla grönsaker.

3. Boil the broccoli lightly. / Koka broccolin lätt.

4. Slice the eggplant thinly. / Skiva auberginen tunt.

5. Add salt and chili flakes onto the eggplant. / Lägg lite salt och chili flakes på aubergine skivorna.

6. Sautée in butter. / Stek i smör.

7. Plate nicely. / Lägg upp fint.

8. Done! / Klart!


Tiger Cake with Three Types of Chocolate – Tigerkaka med 3 typer av choklad


Tiger Cake is a true Swedish classic. Most kids love it, and it’s easy to make. Spongecakes in general is a huge hit, and in our house we make them all the time. Before I’ve posted recipes on this lemon and strawberry spongecake, chocolate sponge cake and a brown sugar and peach spongecake. This “tiger cake” is a chocolate and vanilla spongecake, where the flavors are separated and then swirled in the mold. to spice it up, I used chocolate chips in the cake. White chocolate in the vanilla batter, dark chocolate in the chocolate batter, and milk chocolate in-between. The cake turns out moist, delicious and chocolaty, perfect for breakfast, lunch and dinner 🙂

3 eggs / 3 ägg 

1 cup of sugar / 2.5 dl socker

2.6 ounces of butter / 75 g smör 

1.4 cups of flour / 3 dl mjöl 

1.5 tsp of baking powder / 1.5 tsk bakpulver

0.3 cups of water / 3/4 dl vatten

2 tsp vanilla extract / 2 tsk vaniljsocker 

3 tbsp of cacao powder / 3 msk kakao 

2 tbsp white chocolate chips / 2 msk vit choklad chocolate chips 

2 tbsp dark chocolate chips / 2 msk mörka chocolate chips 

2 tbsp milk chocolate chips / 2 msk mjölk chocolate chips 

1. Preheat the oven to 350 F. / Sätt ugnen på 175 grader.

2. Spray a baking mold with non stick spray. / Smöra och bröa en form.

3. Whisk eggs and sugar fluffy. / Vispa ägg och socker fluffigt.

4. Melt the butter. / Smält smöret.

5. Add in butter, flour, vanilla and baking powder to the sugar and egg. / Blanda i smör, mjöl, vaniljsocker och bakpulver i ägget och sockret.

6. Divide the batter in 2 parts. / Dela smeten i två.

7. Mix one with cacao. / Blanda i kakao i den ena.

8. Add in the chocolate chips, white once in the vanilla batter, and dark in the chocolate batter. / Lägg i chokladen, vit i vaniljsmeten och mörk i chokladsmeten.

9. Layer the cake batters in the mold with milk chocolate in between. / Lägg i smeten i lager i formen.

10. Bake for about 35 min. / Grädda i ca 35 min.

Bernte’s Shrimp Pasta (w. Homemade Fish stock) – Bernte’s Räkpasta (med Hemgjord Fiskbuljong)


My brother’s girlfriend has a dad (Bernte) who is a wonderful cook. For over a year, I’ve been hearing about this shrimp pasta that he made, and how absolutely wonderful it was. The second time my brother arrived from their country house, the pasta had been served again. Bernte was kind enough to share his special recipe – that I’m now sharing with you! Please don’t be intimidated by the ingredients or the time! It’s easy, and you will love it. How cool isn’t it to be able to say that you made your own fish stock?  So here comes this special recipe – I hope you will try it too. And than you, Bernte, for letting me use your recipe.

Recipe/ Recept 

2-3 pounds of shrimp / 1-1.5 kg räkor

1 yellow onion / 1 stor gul lök 

2 carrots / 2 morötter

2 sticks of selleri / 2 stjälkar selleri 

4 garlic cloves / 4 vitlöksklyftor 

2.5 tbsp tomato purée / 2.5 msk tomatpuré

0.8 cups of white whine / 2 dl vitt vin 

vatten / water

salt / salt

1.3 cups of cream / 3 dl grädde

pasta / pasta

parsley / persilja 

parmesan / parmesan

1. Start by peeling the shrimp. Save the peel. / Börja med att skala räkorna. Spara skalet.

2. Chop all the vegetables. / Hacka alla grönsaker.

3. Fry the vegetables in olive oil until softened. / Stek grönsakerna i olivolja tills de mjuknat.

4. Add in the tomato purée. / Lägg i tomatpurén.

5. Add in the shrimp peel, keep stirring. / Lägg i räkskalen, rör om hela tiden.

6. Keep stirring for about 7 min. / Fortsätt röra runt i ca 7 min.

7. Add in the wine. / Lägg i vinet.

8. Cover up with water. / Täck med vatten.

9. Let simmer for 30 min, without lid. / Låt puttra i 30 min, utan lock.

10. Strain away the peel and vegetables through a fine strainer. / Sila bort skal och grönsaker genom en fin sil.

11. Reduce further until about 1.5 cup remains. / Reducera ytterligare tills drygt 3 dl kvarstår.

12. Add in salt. / Lägg i salt.

13. Add the cream and let simmer until creamy. / Lägg i grädden och låt puttra tills såsen blivit krämig.

14. Mix with the pasta. / Blanda med pastan.

15. Serve with the shrimp, parsley, and lots of parmesan. / Servera med räkor, persilja och massor av parmesan.

Banana & Chocolate Brownie – Banan & Choklad Brownie


Half the flour swapped for a mashed banana? Done! Juicy, delicious, gooey dark chocolate that’s perfect at any time. It mixes in one bowl which creates minimal dishes. It might take slightly longer than a normal brownie to bake, so make sure you don’t take it out too early!

10 tablespoons butter / 145 g smör

1.25 cups of sugar / 3 dl socker

3/4 cup cocoa powder / 1.8 dl kakao

1/2 tsp salt / 1/2 tsk salt

1 teaspoon vanilla extract / 1 tsk vaniljsocker

2 eggs / 2 ägg

1/4 cup of flour / 0.6 dl mjöl 

1 banana / 1 banan

0.4 cups chopped dark chocolate / 1 dl hackad mörk choklad


1. Preheat the oven to 325 F. / Sätt ugnen på 160 grader.

2. Put aluminum foil in a brownie dish, the sides need to show so you can lift it out. / Lägg folie en en fyrkantig ugnssäker form. Sidorna ska välla över så du lätt kan lyfta ur brownien.

3. Melt the butter. / Smält smöret.

4. Mash the banana. / Mosa bananen

5. Mix in all other ingredients. / Blanda i alla andra ingredienser.

6. Bake for about 22 min. / Grädda i ca 22 min.

7. Let cool. / Låt svalna.

8. Spred the dulce de leche on. / Bred på dulce de lechen.

9. Let cool in the fridge for about 10 hours. / Låt stå i kylen i minst 10 h.

Awesome Salmon & Passion fruit Salad with Cilantro Dressing – Fantastisk Lax & Passionsfrukts Sallad med Koriander Dressing


Since the weather in Sweden doesn’t seem to cool off yet (awesome) there’s definitely a need for some quick, easy and delicious salad inspiration recipes. This sallad was so good that me and my brother ate it for lunch 3 days in a row. My brother even said he’d make the dressing the coming days too. The dressing contains a couple of ingredients, but most of it, you’ll find in your pantry at home. It’s really only the fresh cilantro that you will maybe have to purchase. When it comes to presentation, or ingredients for that part, don’t be scared to experiment a little. Put in whatever you like. I used warm smoked salmon, a swedish speciality, but really, any kind of salmon will do. Enjoy your salad, and I hope you try making the delicious dressing.

Hearts of Romaine / Roman Sallad

Salmon of any kind / Lax

3 Passion fruits / 3 passionsfrukter

1 spring onion / 1 salladslök

1 avocado / 1 avokado

Pea pods / Ärtskidor

Halloumi cheese / Halloumi ost

Cucumber / Gurka

Dressing / Dressing 

0.4 cups chopped cilantro / 1 dl hackad koriander

Olive oil / Olivolja

Balsamico / Balsamico

Honey / Honung

Soy Sauce / Soya

Chil iflakes / Chiliflakes

1. Start by making the dressing. / Börja med att göra dressingen.

2. Chop the cilantro and put in a small glass. / Hacka koriandern och lägg i ett litet glas.

3. Cover with olive oil. / Täck med olivolja.

4. Add about 0.2 cups of soy. / Tillsätt ca 0.5 dl soya.

5. Add 1 tbsp of honey. / Lägg i 1 msk honung.

6. And then 1 tsp balsamico. / Och sen 1 tsk balsamico.

7. Add chili flakes after flavor. / Tillsätt chiliflakes efter smak.

8. Cut all other ingredients and plate nicely. / Skär alla andra ingredienser och lägg upp fint.

9. Cover with passion fruit and the dressing. / Täck med passionsfrukt och dressing.
