Mini Apple Pies w. Cinnamon & Cardamom Boiled Apples – Små Äppelpajer med Kanel & Kardemumma kokta Äpplen

Recipe (makes 8 small pies) / Recept (8 små pajer)

Bottom dough / Botten deg

3 tbsp of butter / 3 msk smör

2.5 tbsp of flour / 2.5 msk mjöl

1 tbsp sugar / 1 msk socker

Top dough / Top deg 

3 tbsp of butter / 3 msk smör

2.5 tbsp of old fashioned rolled oats / 2.5 msk havregryn

1 tbsp sugar / 1 msk socker

Apples / Äpplen 

2 apples / 2 äpplen

1.5 tsp cardamom / 1.5 tsk kardemumma

1.5 tsp of cinnamon / 1.5 tsk kanel

1 tsp of sugar / 1 tsk socker

1 tsp syrup / 1 tsk sirap

1 tbsp of butter / 1 msk smör

1. Start by preheating the oven to 400. / Sätt ugnen på 200 grader.

2. Cut the apples in small pieces. / Skär äpplena i små bitar.

3. Put the apples and all apple ingredients in a pot. / Lägg äpplen och alla äpple ingredienser i en kastrull.

4. Bring to boil, reduce heat and cook for about 7-10 min. / Koka upp, skruva ner värmen och låt puttra i ca 7-10 min.

5. Mix all the ingredients to the bottom dough. / Blanda alla ingredienser till under-degen.

6. Push out in aluminum molds in a muffin thin. / Tryck ut i botten på aluminiumformar i en muffinplåt.

7. Fill up with apples. / Fyll på med äpplen.

8. Mix all ingredients to the top dough. / Blanda alla ingredienser till topp degen.

9. Spread the crumbles on top of the apples. / Bred ut smulorna på toppen av äpplena.

10. Bake for about 15 min or until golden. / Grädda i ca 15 min eller tills gyllene.

11. Done! / Klart!

Mini Scones w. Cinnamon & Cranberries – Mini Scones med Kanel och Tranbär

Every time I make scones, I think of my mom. She was the scones “master” in our house, and it was always a really happy, and really good day when I walked down the stairs to our kitchen, and the whole kitchen smelled like scones. Now a days, there’s not as many scones baked or made, but whenever I do make them, it makes me happy. As I’ve mentioned in this post, we usually bake scones in a different way than people do in the US. Last time I baked, I used a muffin thin in order to make the scones smaller and more symmetric. I added some cinnamon to half of the dough, and some dried cranberries to the other half. The scones turned out super cute and delicious. I believe scones are the absolute best right out of the oven with butter and a cup of coffee :).

Recipe / Recept

2 cups of flour / 5 dl mjöl

2 tsp of baking powder / 2 tsk bakpulver

1 tsp of salt / 1 tsk salt

0.8 cups of milk (soy or rice works as well as regular) / 2 dl mjölk (soya eller ris funkar lika bra som vanlig)

5 tbsp of butter (about 2/3 of a stick) / 75 g smör

some cinnamon / lite kanel 

some cranberries / like torkade tranbär

1. Preheat the oven to 480 F. / Sätt ugnen på 250 grader.

2. Mix flour, baking powder and salt in a bowl. / Blanda mjöl, salt och bakpulver i en bunke.

3. Add the milk. / Tillsätt mjölken.

4. Cut the butter in pieces and mix it in with your hands. / Skär smöret i bitar och blanda till en deg med hjälp av dina händer.

5. Part the dough in two. / Dela degen i två.

6. Add cinnamon to one part, and cranberries to the other. / Lägg i kanel i den ena delen och tranbär i den andra.

7. Prepare a muffin thin. / Förbered en muffinplåt.

8. Part the dough’s in 8’s (making 16 scones in total). / Dela degarna i 8. Det blir 16 scones totalt.

9. Roll into small balls and put in the thin. / Rulla små bollar och lägg i plåten.

10. Take a fork and pick on the top of the scones. / Ta en gaffel och picka på toppen av sconsen.

11.  Bake for about 12-15 minutes or until golden. / Grädda i ca 12-15 min eller tills gyllene.

12. Serve immediately. / Servera direkt.

Addicting Banana & Nutella Muffins – Beroendeframkallande Banan och Nutella Muffins

These Muffins. I don’t even know how to explain them. First of all, the MUFFIN. I’m not usually a huge fan to be honest, I feel like muffins can be kind of dull. But these…. Are moist, not to sweet, bananay and just delicious! And then comes the frosting….. Which I found on Sally’s Baking Addiction and slightly modified, was a DREAM. in combination…. Unresistibly, deliciously addicting banana and nutella muffins. A must try.

Recipe / Recept 

Muffins 

2/3 cups of butter / 75 g smör 

1.5 cups of flour / 3 dl mjöl

3 bananas / 3 bananer

1 egg / 1 ägg

3/4 cups of sugar / ca 2 dl socker 

2 tsp of baking powder / 2 tsk bakpulver

a little salt / lite salt 

Frosting 

1.5 sticks of butter / 150 g smör

2 cups of powdered sugar / 5 dl florsocker 

4 large tbsp of nutella / 4 stora msk nutella 

4 tbsp of milk / 4 msk mjölk

1. Preheat the oven to 350 F. / Sätt ugnen på 175 grader.

2. Melt the butter. / Smält smöret.

3. Mash the banana. / Mosa bananen.

4. Mix all the ingredients together. / Blanda alla ingredienser.

5. Bake in the oven for about 20 min or until a little golden. / Grädda i ugnen i ca 20 min, eller tills gyllene.

6. Let cool. / Låt svalna.

7. Whisk the butter for the frosting fluffy. / Vispa smöret till frostingen fluffigt.

8. Mix in the sugar. / Vispa i sockret.

9. Whisk in the nutella. / Vispa i nutellan.

10. Whisk in the milk. /  Vispa i mjölken.

Swedish Mocca Cake and a Throwback to Summer – Mocca Tårta och en “Throwback” till sommaren

A slight blog pause the past week. Midterms seems to never get less hectic. But now I’m up for new post and inspiring pictures again! This post will be dedicated as a throwback to summer. I want to say that fall has finally arrived to DC, and it’s no longer summer. I baked this cake one of the last days of being home in Stockholm. The cake is a Swedish classic, “tosca cake” that I added coffee too. The inspiration actually comes from a boxmix, and has a mild taste of coffee too it. Perfect for a classic Swedish afternoon “fika”. Stay tuned!

Recipe / Recept 

3.5 ounces of butter / 100 g smör 

2 eggs / 2 ägg

0.8 cupd of milk / 2 dl mjöl

1 tsp of baking powder/ 1 tsk bakpulver

0.2 cups of coffee / 1/2 dl kaffe 

Frosting / Glasyr

3.5 ounces of butter / 100 g smör

0.4 cups of sugar / 1 dl socker

2 tbsp of milk / 2 msk mjölk

3.5 ounces of almonds (sliced) / 100 g mandel (skivad)

1. Preheat the oven to 350 F. / Sätt ugnen på 175 grader.

2. Melt the butter. / Smält smöret.

3. Whisk eggs and sugar fluffy. / Vispa ägg och socker fluffigt.

4. Carefully add in flour and baking powder. / Rör försiktigt i mjöl.

5. Add the coffee and melted butter. / Tillsätt kaffe och smält smör.

6. Bake the cake for about 20-25 min. / Grädda i ca 20-25 min.

7. Whisk together ingredients for the frosting. / Blanda ihop ingredienserna till glasyren.

8. Spread on top of the cake. / Bred på kakan.

9. Bake for additionally 10-15 min. / Grädda ytterligare 10-15 min.

10. Let cool. / Låt svalna.

11. Done! / Klart!
