Jam & Cardamom Cookies – Sylt & Kardemumma Kakor

And all of a sudden I’m at the end of my semester again. First week of school it always seems so far until the end, yet, every semester it goes by as quick. Thanksgiving break, a week of classes and then finals. This also means that this is the third semester I’m keeping up (well, at least trying to) with the blog – and I’m so happy I do. Even though it’s much harder to after 250+ posts invent new things, find the time amongst all other activities, and, maybe mostly, have the time to post it (I still have some posts since summer that are not yet up….). Here comes a recipe of Jam & Cardamom cookies. I love jam (or thumbprint) cookies, but these comes with a twist. I put an egg in the dough and decreased the amount of flour slightly, this created a much softer cookie. Cardamom can be put in anything (and make it absolutely delicious 🙂 )

Recipe / Recept 

1.8 sticks of butter / 200 g smör 

0.4 cups of sugar / 1 dl socker

1 tsp vanilla / 1 tsk vaniljsocker

1.6 cups of flour / 4 dl mjöl

1 tsp of baking powder / 1 tsk bakpulver

1 tsp of cardamom / 1 tsk kardemumma

1 egg / 1 ägg

jam /sylt

1. Preheat the oven to 430 F. / Sätt ugnen på 220 grader.

2. Mix all ingredients. / Blanda alla ingredienser.

3. Roll small balls and make a thumbprint in them. / Rulla små bollar och gör ett litet tumavtryck i dom.

4. Put in some jam. / Lägg i sylt.

5. Bake for about 8 min. / Grädda i ca 8 min.

6. Done! / Klart!

Cute Chocolate Cookies – Söta Chokladkakor

Last week I went baking-crazy. It’s funny how a lot of people see baking and cooking as very stressful, for me, it’s like therapy. These cookies I found on this blog, and been wanting to try them. Although, the original recipe called for special Swedish candies or frozen Nutella, which was out of my possession. Instead, I used chocolate chips. I baked three types of cookies, and my housemates all voted for this one as their favorite (which I disagreed with, but flavors different for everyone). So, I definitely think you should try these, and stuff them with whatever noms you have in your pantry of fridge!

Recipe (makes about 25) / Recept (ca 25 stycken)

1/2 stick of butter / 60 g smör

1/4 cup of brown sugar / 0.75 dl muscavado socker

1 egg / 1 ägg

4 tbsp cocoa powder / 4 msk kakao

1 cup of flour / 2.5 dl mjöl

0.5 tsp baking soda / 0.5 tsk bikarbonat

0.4 cups of sugar / 1 dl socker

1 tsp vanilla / 1 tsk vaniljsocker 

Garnish / Topping

chocolate chips / chocolate chips

sugar / socker

1. Preheat the oven to 390 F. / Sätt ugnen på 200 grader.

2. Mix brown sugar and butter together. / Vispa smör och muscavado socker tillsammans.

3. Add all other ingredients. / Lägg i alla andra ingredienser.

4. Roll small balls and stuff them with chocolate chips. / Rulla små bollar och fyll med chocolate chips.

5. Roll the cookies in sugar. / Rulla kakorna i socker.

6. Bake for about 7 min. / Grädda i ca 7 min.

7. Let cool. / Låt svalna.

8. Done! / Klart!

Cottage Cheese & Flax Seed Pancakes – Keso & Flaxfrö Pannkakor

Yes! Finally some new pancake recipes. I know there’s definitely hasn’t been enough breakfast inspiration on the blog lately – but here it comes! Perfect weekend (or luxury weekday) recipe! These Pancakes are flour free, healthy, filled with protein and generally awesome. They were easy to make, and can, as banana pancakes, be seasoned with whatever you would like. If you want to increase the amount of pancakes, just keep the egg / cottage cheese ratio stable, and there shouldn’t be an issue.

Recipe / Recept 

3 eggs / 3 ägg

3 big tbsp of cottage cheese / 3 stora msk keso

1 tbsp flax seeds / 1 msk flaxfrön 

1 tbsp chia seeds / 1 msk chia frön 

cinnamon & cardamom / kanel & kardemumma 

1. Add eggs, cottage cheese and flax seeds together. / Blanda ägg, keso och flaxfrön.

2. Mix with a hand mixer. / Mixa med en stavmixer.

3. Add in chia seeds and spices. / Lägg i chia frön och kryddor.

4. Cook the pancakes in a little butter, flip when they bubble. / Stek pannkakorna i lite smör. Vänd när dom bubblar.

5. Serve with yoghurt, fresh fruit, syrup, berries or anything else! / Servera med färsk frukt, yoghurt, sirap, bär eller något annat!

6. Done! / Klart!

Lemon Sticky Cake with Lime Frosting – Citron Kladdkaka med Lime Frosting

Sometimes, the world just calls for something pretty. I have a weird love for icing bags, and icing things in general. It’s one of my favorite things about baking, and I oftentimes try making something that can be iced (I’ve heard you can make cookies with an icing bag?!). However, I’ve lately seen multiple recipes circling around the blog sphere of Lemon Sticky Cake, basically a lemonbar without the crust. I’ve been wanting to try, but haven’t gotten around too. So, the other day when I realized I had a couple of lemons left that needed to be used before going bad, I was thrilled. And surprised. Wow, this cake was SO easy to make (honestly) and highly appreciated. As much as I love chocolate, it is nice to sometimes be able to switch it up, and this cake will definitely become my go to. But then, I realized, there was nothing to ice. So, I made a lime, cream cheese frosting to decorate it with, and used that as a substitute for serving it with whipped cream. I then went a little crazy with different sprinkles I found, just because sometimes you just need a cake that makes you happy. Again, there are multiple recipes on this cake – here’s my version. Enjoy!

Recipe / Recept

Cake / Kaka

3 small lemons / 3 små citroner

3 eggs / 3 ägg

1.5 sticks of butter / 150 gram smör

0.8 cups of flour / 2 dl mjöl

1.2 cups of sugar / 3 dl socker

1 tsp vanilla / 1 tsk vaniljsocker

Frosting / Frosting

1/2 cup heavy whipping cream / 0.75 dl vispgrädde

1 package of light cream cheese / 1 paket cream cheese light

1 cup icing sugar / 2.5 dl florsocker

3 limes, peel and juice / 3 lime, skal och saft

0.5 tsp vanilla / 0.5 tsk vaniljsocker

1. Preheat the over to 340 F. / Sätt ugnen på 175 grader.

2. Peel and juice the lemons. / Riv skalet och pressa saften från citronerna.

3. Melt the butter. / Smält smöret.

4. Remove from the heat. / Ta bort från plattan.

5. Mix in all other ingredients. / Blanda i alla andra ingredienser.

6. Bake in a spring form. / Grädda i en form med löstagbara kanter.

7. Bake for about 20 min. / Grädda ca 20 min.

8. Let cool. / Låt svalna.

9. Whisk the cream for the frosting. / Vispa grädden till frostingen.

10. Mix in all other ingredients. / Blanda i alla andra ingredienser.

11. Ice the cake. / Frosta kakan.

12. Done! / Klart!

Oven Roasted Tomatoes & Potatoes – Ugnsrostade Tomater & Potatis

Potatoes is something I very rarely cook. Not because I don’t like it – quite the opposite. It’s just that potatoes are never what inspires me when I’m in the store, there are always so many other things I come across that I want to try. Although, small, fresh potatoes are so good, and if not just boiled with some dill (yes, that is for sure a Swedish thing) you can roast them in the oven…. It takes some time, and I think that’s another reason to why I don’t make oven roasted potatoes that often. Although, they cook themselves, and you can prepare something else (or do dishes) while they cook in the oven. Here, they’re prepared with tomatoes, olive oil, salt and basil….

Recipe / Recept 

Potatoes and tomatoes / potatis och tomater

olive oil / olivolja 

fresh basil / färsk basilika 

salt / salt 

1. Preheat the oven to 440 F. / Sätt ugnen på 225 grader.

2. Cut bigger potatoes in two, rinse and wash all potatoes. / Skär större potatisar i två, skölj och tvätta all potatis.

3. Cut over fresh basil. / Klipp över färsk basilika.

4. Add olive oil, not too much. / Tillsätt olivolja, inte för mycket.

5. Add salt. / Salta.

6. Mix. / Blanda.

7. Cook in the oven for about 35 min, or until golden. / Tillaga i ugnen i ca 35 min, eller tills gyllene.

8. Done! / Klart!

The day of Swedish Chocolate Cake – Kladdkakans Dag

So, apparently it’s “kladdkakans” dag in Sweden tomorrow. A kladdkaka is a very gooey- brownielike chocolate cake that most Swedes can make without a recipe…. Still, there are so many variations of a kladdkaka and a fun cake to experiment with. On the blog, I’ve had multiple recipes and post variating my Kladdkaka, here’s a few for inspiration:

Chicken! Chicken! Chicken! – Kyckling! Kyckling! Kyckling!

Chicken was definitely what I used to cook the most. Although, since my brother and his girlfriend decided to go vegetarian (with exception for fish) this was also what I started to cook more and more. As a student though, it’s easier to get cheap(er) chicken that’s still organic. Fresh, organic fish is quite expensive…. This recipe is chicken cooked with onion and bacon and boiled (!) in broth. It might seem strange, but I’ve started to really enjoy cooking chicken by boiling it. It really let’s the flavor of whatever you boil it in absorb into the meat. So here’s another chicken recipe for you – easy and quick.

Recipe (3)/ Recept (3)

2 boneless chicken breasts / 2 kyckling filéer

1 small pack of bacon in cubes / 1 litet paket bacon i kuber

2 spring onions / 2 salladslökar 

water / vatten

1 stock cube / 1 buljongtärning

1. Start by cooking the bacon. / Börja med att steka bacon.

2. Chop the onion. / Hacka löken.

3. Quickly fry the onion. / Stek löken snabbt.

4. Bring water to boil. / Koka upp vatten.

5. Add the stock cube. / Tillsätt buljong tärningen.

6. Add bacon and onion. / Tillsätt bacon och lök.

7. Add the chicken. / Lägg i kyckling.

8. Reduce heat, let simmer until the chicken is cooked. / Sänk värmen, låt puttra tills kycklingen är klar.

9. Done! / Klart!

Mini Meringue Tart – Mini Maräng Bakelse

For those of you who’s been with me for a while, you know that I love meringues… It’s just something about them that I love. This is a suggestion of a perfect, simple and delicious dessert. Instead of making the meringues small and high, they can be made as the bottom for a little tart. This is something that is easy and looks very cute – but it doesn’t take the full time of a pavlova. You would make a normal meringue batter, and then top it off with whipped cream and raspberries, or any other berries for that matter.

Recipe / Recept 

3 eggs / 3 ägg 

0.8 cups of sugar / 2 dl socker

5 lemon juice drops / 5 droppar citron juice

1. Preheat the oven to 250 F. / Sätt ugnen på 125 grader.

2. Separate egg whites from yolks. It’s super important that there’s no yolk with the whites. / Separera äggvitor från ägg gulor, viktigt att ingen gula hamnar med vitan!

3. Beat the egg whites with a mixer until firm. You should be able to turn the bowl upside down. / Vispa äggvitorna till ett hårt skum. Du ska kunna vända bunken upp och ner.

4. Carefully pour in the sugar, keep whisking. / Häll försiktigt i sockret, vispa undertiden.

5. Carefully pour in the lemon juice. / Häll försiktigt i citronen.

6. Use an icing bag to create the meringue bottoms on a non stick paper. / Använd en sprits och spritsa ut maräng plattor på ett bakplåtspapper.

7. Bake for about 35 min. Turn the oven off and let the meringues bake in the after heat. / Grädda i ca 35 min, stäng av ugnen och låt marängerna gräddas i efter värmen.

8. Let cool completely. / Låt svalna.

9. Top with whipped cream and berries. / Toppa med vispad grädde och bär.

10. Done! / Klart!
