This type of cake reminds me of when I was little, since it was one of the first things my friends and I learned how to make! It’s still as good today, and is very easy to make, the glaze makes the cake crazy moist, and gives it a great coffee taste. If you don’t like coffee, the coffee can be left out!

Recipe / Recept

5 eggs / 5 ägg

1.4 cups of sugar / 3.5 dl socker

1.8 cups of flour / 4.5 dl socker

3 tsp of baking powder / 3 tsk bakpulver

8 tbsp of cacao powder / 8 msk kakao

300 g of butter / 300 g smör

0.8 cups of water / 2 dl vatten 

Glaze / Glasyr 

4 tbsp espresso coffee / 4 msk espresso kaffe 

0.4 cups of heavy whipping cream / 1 dl vispgrädde

1 cup of icing sugar / 2.5 dl florsocker

1/2 dark chocolate bar / 1/2 mörk chokladkaka

shredded, unsweetened coconut / riven kokos

1.Preheat the oven to 440 F. / Sätt ugnen på 225 grader.
2.Whisk sugar and eggs together until light and fluffy. / Vispa ihop socker och ägg tills det blir fluffigt.
3. Carefully add flour, baking powder and cacao powder. / Blanda försiktigt i mjöl, bakpulver och kakao.
4. Melt the butter and add in the water, ad to the batter. / Smält smöret och lägg i vatten, blanda i smeten.
5. Bake for about 15-20 min, or until the cake is just set in the middle. / Grädda i 15-20 min, eller tills kakan precis stelnat i mitten.
6. Let cool. / Låt svalna.
7.Mix together cream, coffee and chocolate in a pot, and stir until the chocolate is melted. / Blanda ihop grädde, kaffe och choklad i en kastrull rör tills chokladen smält.
8.Add in the icing sugar. / Lägg i florsockret.
9.Let cool. / Låt svalna.
10. Spread over the cake and sprinkle with coconut. / Bred glasyren på kakan och strö över kokos.
11. Let cool in the fridge. / Låt svalna helt i kylen.
12. Done! / Klart!

Homemade Baked Sweet Potato Fries – Ugnsbakade Sötpotatis Pommes Frites

This post became on Instagram one of my most liked posts! Crazy to think of, yet, I didn’t want to post it on the blog since I didn’t take proper pictures. Although, the recipe has been requested, so, here it comes!

Recipe / Recept 

2 sweet potatoes / 2 sötpotatisar 

rosemary / rosmarin

salt / salt 

olive oil / olivolja 

  1. Preheat the oven to 440 F. / Sätt ugnen på 225 grader.
  2. Cut the sweet potatoes in slim wedges (fries style). / Skär potatisen i tunna stavar.
  3. Sprinkle over rosemary, salt, and some olive oil. Toss around so they’re all covered. /Strö över rosmarin, salt och oilvolja. Blanda runt så att allt är täckt.
  4. Bake for about 30 min, or until light brown. Flip them after about 10-15 min. / Grädda i ca 30 min, eller tills ljusbruna. Vänd runt potatisen på plåten efter ca 10-15 min.
  5. Sprinkle over fresh herbs! / Strö över färska kryddor!
  6. Done! / Klart!

Chocolate Cupcakes with Rose Water Frosting – Chokladcupcakes med Rosenvatten Frosting

I’ve realized over the past days working through my recipe index how my baking has changed, partly because after a while, all your traditional go to bakes has been uploaded, and you’re challenged to try new things. This led me to buy some rose water extract on bottle. I had never before used rose water up until a couple of days ago – but I’m already a fan. If you put it in cakes, they become extremely moist and soft (keep your eye’s out for a recipe coming soon), and the flavor is just something new and different. The cupcakes I used a regular chocolate cupcake recipe for, and the frosting recipe I found on this blog, although I added some more cream and rose water to mine, since I believed it was a little too thick before. Sprinkled with silver sprinkles and glittering stars, these would be perfect in a fairy tale.

Recipe / Recept 

3 eggs / 3 ägg

125 g of butter / 125 g smör 

2.4 cups of sugar / 3 dl socker 

2.4 cups of flour / 3 dl mjöl

0.3 cups of water / 3/4 dl vatten

1.5 teaspoons of baking powder / 1.5 tsk bakpulver

1 teaspoon of vanilla extract / 1 tsk vaniljsocker

4 tbsp of cacao powder / 4 msk kakao

Frosting / Frosting

1 stick of butter / 115 g smör

2 cups icing sugar / 5 dl florsocker

1 tsp vanilla / 1 tsk vaniljsocker 

1/3 cup whipping cream / 0.75 dl vispgrädde

0.5 tsp of rose water / 0.5 tsk rosenvatten extrakt

2 drops of red food coloring / 2 droppar röd karamellfärg

1. Preheat the oven to 350 F. / Sätt ugnen på 175 grader.

2. Whisk sugar and eggs fluffy and almost white, melt the butter. / Vispa socker och ägg pösigt och nästan vitt, smält smöret.

3. Mix all the dry ingredients together separately. Add the flour mix to the egg and sugar mix, be careful and add a little at a time./ Blanda alla torra ingredienser i en bunke. Tillsätt mjölblandningen försiktigt till ägg och socker mixen.

4. Add melted butter and water. / Tillsätt smält smör och vatten.

5. Put down muffin-thins in a muffin-pan, and fill 3/4 with batter. / Sätt formar i en muffinplåt, fyll till 3/4 med smet.

6. Bake for about 15 min. / Grädda i ca 15 min.

7. Let cool completely. / Låt svalna helt.

8. Mix the butter and icing sugar together for about 2 min. / Vispa socker och florsocker i ca 2 min.

9. Add vanilla and cream. / Tillsätt vaniljsocker och grädde.

10. Mix for about 2 more min. / Vispa i ca 2 min till.

11. Add the rose water. / Blanda i rosen vattnet.

12. Blend in the food coloring. / Vispa i karamellfärgen.

13. Ice the cupcakes and sprinkle with silver sprinkles. / Glasera cupcakesen och strö över silverkulor.

14. Done! / Klart!

Homemade Oreos – Hemgjorda Oreos

This reminds me of my best friend Jewelle! She made, a couple of years ago, homemade oreos, and I remember how impressed I was. Yet, oreo cookies has never been a thing in my life, and I think that the oreos that you buy have a quite bland taste, even though that can be desirable from time to time! These oreos are much more chocolaty and tastes more like real chocolate cookies! They are easy to make, but I made a few adjustments to how they “should” be made. Mine are not of a perfect round shape. Why? Because I was way to impatient to chill the dough enough to be able to cut out rounds. I rolled small balls and pressed them out with the palm of my hand instead! Enjoy!

Recipe / Recept 

1.3 cups cocoa powder / 3.1 dl kakao

1.5 cups of flour / 3.75 dl mjöl

0.5 tsp of salt / 0.5 tsk salt 

2 sticks of butter / 230 g smör

1.5 cups of sugar / 3.75 dl socker

2 eggs / 2 ägg

1 tsp vanilla / 1 tsk vanilj 

Filling / Fyllning

1 stick of butter / 115 g smör

2 cups powdered sugar / 5 dl florsocker 

1 tsp vanilla / 1 tsk vaniljsocker

1.Start by mixing flour and cacao powder. / Börja med att blanda kakao och mjöl.

2. Mix together butter, eggs and sugar. / Vispa ihop smör, ägg och socker.

3. Mix all the ingredients. / Blanda alla ingredienser.

4. Chill for 30 min. / Kyl i 30 min.

5. Preheat the oven to 325 F. / Sätt ugnen på 160 grader.

6. Roll out small balls and flatten them with your palm. About the size of a larger teaspoon. / Rulla små bollar och platta ut med din handflata. Storlek av en större tesked.

7. Bake for about 12 min. / Grädda i ca 12 min.

8. Let cool. / Låt svalna.

9. Mix together all the ingredients for the filling. / Blanda samman alla ingredienser till fyllningen.

10. Spread the filling on one cookie and put another one on top. Match the sizes of the cookies if they came out uneven. / Bred på fyllning på en av kakorna och lägg en till ovan på. Matcha storlek på kakorna om dom inte blev helt jämna.

10. Done! Store in the fridge. / Klart! Förvara i kylen!

Swedish FALUKORV with Mashed Potatoes – Gratinerad Falukorv med Potatismos

Ok, I’ve been pondering whether or not to post this recipe, mostly because Falukorv is unavailable in the US (it really is, I’ve tried so hard). Although, since this is my foodblog, I feel an urge to post this recipe because Falukorv is one of the very few things I can really crave when I’m not at home. It’s been one of my favorite dishes since I was a child (it’s not only one dish but multiple dishes you can make of it…). Falukorv is a Swedish sausage that comes from the north of Sweden that is half smoked, and I know many people compare it with the German Bologna sausage (don’t personally think it’s comparable, but, you know…). This dish I made when one of my closest friends Anna Meh came and visited Sweden, to let her experience a piece of my childhood. I was very impressed that she dared to try it, and liked it, since I’m not a fan of sausage in other countries. Nonetheless, here’s the recipe – if you ever get a chance to try… It’s amazing :).

Recipe / Recept

1 Falukorv / 1 Falukorv 

Big tomatoes / Stora tomater 

mustard of choice / valfri senap

cheese of choice (sharp cheddar is great) / valfri ost (stark cheddar är supergott) 

Mashed Potatoes / Potatismos 

potatoes / potatis 

milk / mjölk 

butter / smör

salt / salt 

white pepper / vitpeppar

1.Preheat the oven to 400F. / Sätt ungen på 200 grader.

2. Slice the tomatoes thinly. / Skär tomaten i tunna skivor.

3. Make cuts in the sausage. / Skär skåror i korven.

4. Fill the sausage with tomatoes and mustard. / Fyll korven med tomater och senap.

5. Place slices of cheese on top. / Lägg på skivor med ost.

6. Bake for about 30 min. / Grädda i ca 30 min.

7. Boil the potatoes. / Koka potatisen.

8. Mash it with milk, butter, white pepper and salt after taste. / Mosa med mjölk, smör, vitpeppar och salt efter smak.

9. Done! / Klart!

Easy & Delicious Chips & Caviar Snacks – Lätta & Goda Chips & Rom Snacks

It’s a little strange because here in the US “caviar” is such a delicacy, not to say it’s not a little “luxurious” in Sweden, but it’s not the same thing. These chips are perfect for a cocktail party or just as a nice weekend appetizer! Quick and easy to make, and something that any salt-lover will like! This recipe will go under a new category called “Phone Recipes” meaning that they are usually quicker, and photos are taken with my phone, we’ll see how it turns out, let me know what you think!

What you need: / Du behöver:

Lightly salted chips / Lättsaltade lantchips 

1 small red onion / 1 liten rödlök 

sour cream / creme fraiche 

caviar / rom 

fresh dill / färsk dill 

1.Chop the onion in small, small pieces. / Finhacka löken.

2. Spread out the chips. / Sprid ut chipsen.

3. Put a little bit of sour cream, followed by onion and caviar on them. / Lägg på lite creme fraiche, lök och rom.

4. Top with dill. / Toppa med dill.

5. Done! / Klart!

Chocolate Chip Oatmeal Cookies (!!!) – Havregryn & Chocolate Chips Kakor (!!!)

I feel like I start most of my posts with “I love…” and then whatever I’ve baked follows. And I must say that I really do like a lot of the things I make (that’s why I make them) which is a reason for the very few pies here on the blog… Nonetheless, cookies I think could be a hit or miss, since a really good, chewy chocolaty-chunky chocolate chip cookies can be one of the most delicious things ever. Although, there are quite frequently moments where the cookies are dry, hard and crunchy, which is why I like the texture of oatmeal raisin cookies. Despite this I have come to be a sucker for chocolate, so why not combine the best of two worlds? These cookies are a little crispy on the outside, and soft and chewy on the inside – clearly won’t disappoint.

Recept / Recipe (Can be halved if you don’t want plenty some of cookies)

1 cup of butter / 225 g smör 

0.75 cups of brown sugar / 1.8 dl muscavado socker

0.75 cups of white sugar / 1.8 dl vanligt socker

2 eggs / 2 ägg

1 tsp vanilla / 1 tsk vaniljsocker 

1 cup of flour / 2.5 dl mjöl 

0.5 tsp of baking soda / 0.5 tsk bikarbonat 

1 tsp of salt / 1 tsk salt 

3 cups of old fashioned rolled oats / 7.5 dl havregryn 

1.25 cups of chocolate chips / 3 dl chocolate chips

1.Preheat the oven to 325 F. / Sätt ugnen på 165 grader.

2. Mix together sugars and egg. / Blanda samman ägg och socker.

3. Mix in everything else except chocolate chips. / Blanda i allt annat utom chocolate chipsen.

4. Carefully stir in the chocolate chips. / Blanda försiktigt i chocolate chipsen.

5. Roll smaller balls, about 1 large tablespoon worth of dough. / Rulla mindre bollar, typ 1 stor matsked med deg.

6. Spread out on the baking thin! / Sprid ut på plåten!

7. Bake until they have become round, but not flat, about 10 min. / Grädda tills de blivit runda men inte platta, ca 10 min.

8. Let cool. / Låt svalna.

9. Enjoy!! / Njut!!

Easy & Pretty Carrot Sponge Cake – Lätt och Vacker Morots Sockerkaka

I love carrot cake! Always have and, probably, always will. Although, I always get stuck while making it just because the normal recipe requires a lot of canola oil, which I never seem to have at home. Therefore, this version is a little easier, and made out of a normal sponge cake. I even used the classic mold with the hole in the middle and just filled it with a sunflower for the pretty look of it! Nonetheless, this cake won’t disappoint any of you carrot-cake-lovers. It’s just as delicious.

Recipe / Recept

3 eggs / 3 ägg

1.2 cups of sugar / 3 dl socker

1 cup of flour / 2.5 dl mjöl

1.5 tsp baking powder / 1.5 tsk bakpulver 

1 tsp of vanilla extract / 1 tsk vaniljsocker 

1/3 stick of butter / 75 g smör

1/2 cups of water / 1 dl vatten 

2 carrots, grated / 2 morötter, rivna

1.5 tsp of cinnamon / 1.5 tsk kanel

1.5 tsp cardamom / 1.5 tsk kardemumma

Frosting

1 package of cream cheese / 1 paket cream cheese

1 small lemon, zest and juice / 1 liten citron, skal och saft

powdered sugar after taste / florsocker efter smak

1. Preheat the oven to 350 F. / Sätt ugnen på 175 grader.

2. Spray or grease a baking form. / Smöra och bröa en form.

3. Whisk egg and sugars fluffy. / Vispa ägg och socker fluffigt.

4. Melt the butter. / Smält smöret.

5. Mix in flour, baking powder and vanilla. / Blanda i mjöl, bakpulver och vaniljsocker.

6. Pour in butter and water and mix. / Blanda i smör och vatten och blanda.

7. Grate the carrots and stir in. / Riv morötterna och blanda i.

9. Add the spices. / Lägg i kryddorna.

9. Bake for about 30-40 min or until done. / Grädda ca 30-40 min eller tills färdig.

10. Let cool and flip on a plate. / Låt svalna och vänd på en tallrik.

11. For the frosting; wash the lemon and grate the zest. / Till frostingen; tvätta citronen och riv skalet.

12. Mix zest, juice and cream cheese. / Blanda skal, saft och cream cheese.

13. Add in sugar after taste. / Blanda i florsocker efter smak.

10. Done! / Klart!

Delicious Chocolate & Pistachio Cookies – Supergoda Choklad & Pistage Snittar

Chocolate “cuts” as we call them in Sweden (just because you cut them side-wise even though you bake them as “one” dough) are a true classic. Just as the sesame syrup cookies, they are easy to make and a true crowd pleaser. In general, we sprinkle them with pearl sugar, but this time, I chose to use both pearl sugar and pistachios, just to spice it up (and, why settle with one when you could have both?). Recipe as follows;

Recipe / Recept 

200 g of butter / 200 g smör

1 cup of sugar / 2.5 dl socker 

1 tbsp of corn syrup / 1 msk sirap 

1 tsp of brewed coffee / 1 tsk kokt kaffe

3.5 tbsp of cacao powder / 3.5 tsk kakao

1 tsp of vanilla / 1 tsk vaniljsocker 

2 tsp baking powder / 2 tsk bakpulver 

2 cups of flour / 5 dl mjöl 

Toppings 

1 egg / 1 ägg

pearl sugar / pärlsocker 

pistachios / pistagenötter 

1.Set the oven at 400 F. / Sätt ugnen på 200 grader.

2. Mix all the ingredients for the cookies together. / blanda alla ingredienser till kakorna.

3. Chop the nuts. / Hacka nötterna.

4. Roll out 2 lengths of rounds of dough. / Rulla ut två längder deg.

5. Press down so that it is about 0.5 inch. / Pressa ut till ca 1.5 cm.

6. Whisk the egg. / Vispa ägget.

7. Brush the dough. / Pensla degen.

8. Sprinkle nuts and sugar. / Strö över nötter och socker.

9. Bake for about 13 min. / Grädda i ca 13 min.

10. Cut them sidewise immediately as they come out of the oven. / Skär på diagonalen när de kommer ut ur ugnen.

11. Let cool. / Låt svalna.

12. Done! / Klart!

The Best Sesame Syrup Cookies – Fantastiska Sesam Kola Kakor

These cookies are guaranteed to create an addiction. They are SO good and SO easy to make! I’ve posted another recipe of syrup cookies before, and they came to be one of my most popular recipes. Adding sesame seeds reminds me of these sesame seed cookies you can buy in the organic food stores…. Although, these include more sugar, gluten and butter…

Recept / Recipe 

100 g smör / 3.5 ounces of butter

1 dl socker / 0.4 cups of sugar

1 msk ljus sirap / 1 tbsp of light baking/corn syrup

1/2 msk vaniljsocker / 1/2 tbsp of vanilla sugar

1 tsk bakpulver / 1 tsp of baking powder

2.5 dl mjöl / 1 cup of flour

0.5 dl sesamfrön / 0.2 cups of sesame seeds

1. Sätt ugnen på 175 grader. / Pre heat the oven to 340 F.

2. Rör ihop alla ingredienser och baka ut i två längder på en plåt. / Mix all the ingredients and make two dough lengths on a baking thin.

3. Grädda i ca 16 min. / Bake for about 16 min.

4. Skär längderna i snittarna diagonalt när längderna fortfarande är varma. / Cut the cookies on the diagonal when they’re still warm.

5. Låt svalna. / Let cool.

6. Klart! / Done!
