Snack Hacks: Most Amazing Vegan Cookie Dough Truffles


Recipe / Recept

1 cup of cashew nuts / 2,5 dl cashewnötter 

0.5 cups of oats / 1,25 dl havregryn 

2 tbsp of agave syrup / 2 msk agave 

1 tbsp honey (can be substituted for maple syrup or other sweetener) / 1 msk honung (kan bytas ut mot sirap eller annan sötning) 

1 tsp vanilla / 1 msk vanilj 

a pinch of salt / en nypa salt 

chocolate chips / chocolate chips eller hackad choklad

1. In a food processor, blend all ingredients except the chocolate chips until a dough forms. / I en mixer, mixa alla ingredienser utom chokladen tills en deg formas.

2. Mix in the chocolate chips. / Blanda i chokladen.

3. Roll balls. / Rulla små bollar.

4. Done! / Klart!


Repost: Mini Vacuum Cleaners (Traditional Swedish Pastry) – Mini Dammsugare

Today is the Vaccum Cleaner Pastry day in Sweden! So here comes my best recipe again!


As strange as it might sound, these delicious small things are called vacuum cleaners in Swedish. It’s a traditional Swedish pastry, and it looks really cute. These were not hard to make, but, a little tricky and required some patients when it came to dipping the ends in chocolate. Other than that, they’re a no-bake treat (currently working with a broken oven). The traditional one’s are green, but the marsipan can be colored in any color you like. One important thing to notice is that the taste of these are very distinct, and not everyone likes them. Although, if you do, the combo of one of these and some coffee is hard to beat.

Recipe / Recept 

2 cups of sponge cake crumbles / 5 dl sockerkakssmulor

3.5 tbsp of soft butter / 50 g mjukt smör

2 large tbsp of cacao powder / 2 stora msk kako

a couple of drops of arrack essence or punch / några droppar arraksextrakt eller punsch

Marsipan / Marsipan

1 chocolate bar / 1 chokladkaka

1. Start by mixing butter, cake crumbs and arrack together. / Börja med att blanda smör, kaksmulor och arrakextrakt.

2. Mix in the cacao powder. / Blanda i kakaon.

3. Roll thin rolls of the dough. The thinner you roll the smaller the pastry. / Rulla tunna längder av degen, ju tunnare du rullar, ju mindre kan dammsugarna bli.

4. Put in the freezer. / Lägg i frysen.

5. Roll out the marsipan super thin. / Kavla ut marsipanen väldigt tunt.

6. Wrap the dough rolls in marsipan. / Rulla in degen i marsipan.

7. Cut in pieces. / Skär i bitar.

8. Put in the freezer again. / Lägg i frysen igen.

9. Melt the chocolate carefully by a water bath. / Smält chokladen med hjälp av ett vattenbad.

10. Dip the ends of the vacuum cleaners in chocolate. / Doppa ändarna i chokladen.

11. Let cool. / Låt svalna.

12. Keep in the fridge. / Förvaras i kylen.

13. Done! / Klart!


Gluten Free Almond Flour Blondies – Glutenfria Mandelmjöls Blondies


Ok, this is definitely one of the most delicious things I’ve eaten. I’ve never made blondies before because who doesn’t want all the chocolate one can have? Yet, I wanted to make something else than brownies and something else than chocolate, since I realize that is the most popular theme when it comes to baking here on the blog. So after some research I tried making these blondies, since it seemed to be the most popular recipe on -the internet-. I decreased the amount of brown sugar by accident, but they were still really sweet, and increased the amount of salt, because I love the sweet & salt flavor together. I also left out the white chocolate chips and the pecans, mostly because I didn’t have it at home. Although, THEY WERE SO SO GOOD. Honestly, they were very delicious. Although, I didn’t get the texture to become brownie like despite double time in the oven, so I would more so call it a blondie cake, nonetheless, you should make them too!

Recipe / Recept 

1/2 cup of butter / 110 g smör 

1/2 cups of brown sugar / 1.25 dl muscavado socker 

1/2 cup of white sugar / 1.25 dl vanligt socker 

2 eggs / 2 ägg

2 tsp of vanilla / 2 tsk vaniljsocker 

1 3/4 cups of almond flour  / 4.2 dl mandelmjöl 

1 tsp baking powder / 1 tsk bakpulver 

1 tsp salt / 1 tsk salt 

1 cups of chocolate chips / 2.5 dl chocolate chips 

1.Preheat the oven to 350. / Sätt ugnen på 175 grader.

2. Mix together butter and sugars until fluffy. / Vispa ihop socker och smör tills det är fluffigt.

3. Mix in the eggs. / Vispa i äggen.

4. Add all other ingredients except chocolate chips. / Blanda i alla andra ingredienser utan chocolate chips.

5. Fold in the chocolate chips. / Vik in chocolate chipsen.

6. Bake for 20-25 min (Mine took 45 min.). / Grädda i ca 20-25 min (mina tog 45 min).

7. Let cool. / Låt svalna.

8. Done! / Klart!



Stove top Upside Down Apple Cake – Upp och Ner Äpple Kaka i Kastrull


Yes, here comes another recipe from the inspiring facebook videos, but this time from tastemade. I thought it looked amazing to be able to cook a whole upside down cake in a pot on the stove, and clearly just had to try. The result? Well, if you’re eating the cake right away, it’s delicious! But if you’re saving it for later, it becomes dry. Not sure if it was my technique / heat being too high, or if this is a result of the stove top cooking, nonetheless, it’s easy & quick to make!

Recipe / Recept

1 apple / 1 äpple

2/3 cups sugar / 1,8 dl socker 

2 eggs / 2 ägg

1/4 cup of sugar / 0,6 dl socker 

1/3 cup of butter / 75 g smör

1 tsp vanilla / 1 tsk vaniljsocker 

2 tbsp cinnamon / 2 msk kanel

1 tbsp of brandy / 1 msk konjak

2/3 cups of flour / 1,8 dl mjöl

1/5 cup of almond flour / 0,5 dl mandelmjöl 

1/2 tsp baking powder / 0,5 tsk bakpulver 

yogurt / yoghurt 

1.Start by cutting the apples in small cubes. / Börja med att skära äpplet i små fyrkanter.

2.Heat up the 1/5 cups of sugar in a pot. / Värm upp 1 dl socker i en tjockbottnad kastrull.

3. When it starts to brown, add in 2 tbsp of water + apples. / När det börjar bli brunt, lägg i 2 msk vatten + äpplen.

4. Set aside. / Ställ åt sidan.

5. Mix together eggs + 1/4 cup of sugar. / Blanda samman ägg och 0,6 dl socker, vispa.

6. Add in the flour, baking powder, cinnamon, vanilla and brandy. / Blanda i mjölet, bakpulvret, kanel, vaniljsocker och konjak.

7. Melt the butter and mix in. / Smält smöret och blanda i.

9. Pour the batter over the apples, and cook on low heat with a lid i ca 10 min. / Bred på smeten over äpplena och grädda på låg värme under lock i ca 10 min.

10. Let cool for about 5 min. / Låt svalna ca 5 min.

11. Flip upside down. / Vänd kastrullen upp och ner.

12. Serve with yogurt. / Servera med yoghurt.

Banana & Chocolate Cheesecake – Banan & Choklad Cheesecake


I don’t make a lot of cheesecakes, mostly because of my own impatience, and the slightly longer cooking times. Although, my friend Samantha made a cheesecake a couple of weekends ago, and I got inspired (because it was so good) to make one as well! I altered the recipe slightly by adding one egg since I don’t bake with corn starch. I added some chocolate powder to the crust, and banana to the filling, and it came out to be delicious! Try it yourself!

Recipe / Recept 

1.5 cups of crushed graham crackers / 6.25 dl smulor av grahams kex 

1 stick of butter / 113 g smör 

2 tbsp of cocoa powder / 2 msk kakao

1 tbsp of sugar + 0.8 cups / 1 msk socker + 2 dl

2 pounds of cream cheese / 900 g cream cheese

3 eggs / 3 ägg

1 tsp vanilla / 1 tsk vaniljsocker 

1 cup of light sour cream / 2.5 dl lätt creme fraiche 

2 bananas / 2 bananer 

1. Start by pre heating the oven to 450F. / Sätt ugnen på 250 grader.

2. Melt the butter and mix with the cookie crumbles as well as the cacao powder and 1 tbsp sugar. / Smält smöret och blanda med kaksmulorna, kakaon och socker.

3. Press out in a round baking pan. / Tryck ut i en rund spring form.

4. Let chill in freezer. / Låt kylas i frysen.

5. Mix sugar, eggs, sour cream, vanilla and cream cheese together. / Vispa ihop socker, ägg, creme fraiche, vaniljsocker och cream cheese.

6. Set aside one third of the batter. / Lägg en tredjedel av smeten i en annan skål.

7. Whisk in the two bananas in the bigger batter. / Vispa i två bananer i den större smeten.

8. Spread the banana batter on top of the crust, and the plain batter on top of the banana batter. / Bred på banansmeten på botten, och den vanliga smeten på banan smeten.

9. Bake for 10 min, then decrease the heat to 200 F and bake for 50 more min. / Grädda i 10 min, sänk värmen till 90 eller 100 grader och grädda ytterligare 50/45 min.

10. Take out and let cool. / Ta ut och låt svalna.

11. Keep in the fridge. / Låt stå i kylen.

12. Done! / Klart!

30 g of instant yeast / 50 g jäst

2 cups of whole milk / 5 dl röd mjölk

0.4 cups of sugar / 1 dl socker

 3.5 ounces of butter / 100 g smör

 1/2 of teaspoon salt / 1/2 tsk salt

2 teaspoons of cardamom  / 2 tsk kardemumma

about 4-5 cups of flour / 10-12 dl vetemjöl

Filling / Fyllning

Butter / Smör

Cinnamon / Kanel

Cardamom / Kardemumma

Sugar / Socker 

1 egg / 1 ägg

1. Heat the milk until body temperature. / Värm mjölken till rumstemperatur.

2. Pour the milk over the yeast and resolve. / Häll mjölken över smulad jäst och låt lösas upp.

3. Add sugar, butter, salt and cardamom. / Tillsätt socker, smör, salt och kardemumma.

4. Add the flour, bit by bit. / Tillsätt mjölet, lite i taget, du kan använda degkrokarna på vispen.

5. When the dough just releases from the edges, stop adding flour. / När degen precis lossnar från kanterna räcker det med mjöl.

6. Let rise for 30 min under a kitchen towel. / Låt jäsa i 30 min under en kökshandduk.

7. Roll the dough out thinly, 1/3 at a time. / Kavla ut degen tunt, 1/3 i taget.

8. Spread the dough with butter, sugar, cinnamon and cardamom. / Bred på smör, kanel, kardemumma och socker.

9. Fold the dough. / Vik degen.

10. Cut thin strips of the dough. / Skär tunna strimlor av degen.

11. Twist the dough. / Vrid strimlorna.

12. Shape hearts. / Forma till hjärtan.

13. Let rise for another 30 min under a kitchen towel. / Låt jäsa ytterligare 30 min under en duk.

14. Heat the oven t0 480 F. / Sätt ugnen på 250 grader.

15. Beat the egg slightly. / Vispa ägget med en gaffel.

16. Brush the egg on the hearts and sprinkle with pearl sugar. / Pensla på ägget på hjärtbullarna och strö på pärlsocker.

17. Bake for about 8-10 min, or until golden. / Grädda i ca 8-10 min eller tills bullarna är gyllene.

18. Let cool. / Låt svalna.

19. Done! / Klart!


Chocolate Mousse Cake Pops – Chokladmousse Cake Pops


I’ve once made cake-pops before, but then I took the easy route with store-bought frosting and pre made cake (yes, it happens 🙂 ). This time, I had made a cake to make mini heart shaped chocolate cookies, but the cake turned out strange in its consistency and I ended up debating to throw it. Then I remembered that I had heart shaped bang molds and chocolate mousse in the frige, so i crumbed the cake up, mixed in the chocolate mousse and after a couple of hours in the fridge, I chocolate dipped the hearts and my cake pops were done!

Recipe / Recept 

3 eggs / 3 ägg 

1 cup of sugar / 2.5 dl socker

2.6 ounces of butter / 75 g smör 

1.4 cups of flour / 3 dl mjöl 

1.5 tsp of baking powder / 1.5 tsk bakpulver

0.3 cups of water / 3/4 dl vatten

3 tbsp of cacao powder / 3 msk kakao 

Chocolate Mousse (This is more than you need, so there will be plenty of leftovers) / Choklad mousse (Det här blir mer än du behöver, så kommer finnas en del kvar)

2 cups of heavy cream / 5 dl grädde 

200 g dark chocolate / 200 g mörk choklad 

1 egg yolk / 1 ägg gula 

Other things needed / Övriga saker

Chocolate for coating / Choklad för doppning

Sprinkles / Strössel

Cake pop sticks / Cake pop pinnar



1. Preheat the oven to 350 F. / Sätt ugnen på 175 grader.

2. Spray a baking mold with non stick spray. / Smöra och bröa en form.

3. Whisk eggs and sugar fluffy. / Vispa ägg och socker fluffigt.

4. Melt the butter. / Smält smöret.

5. Add in butter, flour, vanilla and baking powder to the sugar and egg. / Blanda i smör, mjöl, vaniljsocker och bakpulver i ägget och sockret.

6. Divide the batter in 2 parts. / Dela smeten i två.

7. Mix one with cacao. / Blanda i kakao i den ena.

8. Add in the chocolate chips, white once in the vanilla batter, and dark in the chocolate batter. / Lägg i chokladen, vit i vaniljsmeten och mörk i chokladsmeten.

9. Layer the cake batters in the mold with milk chocolate in between. / Lägg i smeten i lager i formen.

10. Bake for about 35 min. / Grädda i ca 35 min.

11. Whisk the cream until it has a quite thick consistency. / Vispa grädden hårt.

12. Carefully melt the chocolate, remove from heat and add in the egg yolk. / Smält chokladen försiktigt, ta bort från värmen och rör i ägg gulan.

13.  While whisking, add in the chocolate to the cream. / Vispa i chokladen i grädden.

14. Put in the fridge for about 1 hour (preferably more). / Ställ i kylen i ca 1 timme (helst mer).

15. Let the cake cool and make crumbs in a bowl. / Låt kakan svalna och mosa den i en skål.

16. Mix in about 1/2 cup of chocolate mousse (or more depending on consistency). / Blanda i ca 1.5 dl choklad mousse (eller mer beroende på konsistens).

17. Roll balls or divide into molds. / Rulla kulor eller lägg i formar.

18. Freeze for 20 min. / Frys i 20 min.

19. Put in the sticks in the cake pops. / Sätt i pinnarna i cake popsen.

20. Melt chocolate and dip the cake pops. / Smält chokladen och doppa cake popsen.

21. Sprinkle with sprinkles. / Strö på strössel.

20. Done! / Klart!


Chocolate Cookies with Hidden Marshmallows – Chokladkakor med Gömda Marshmallows


This recipe just completely slipped my mind! Made these sweet cookies together with my brother’s girlfriend (and my dear friend) Alexandra, this summer! These cookies comes from one of Sweden’s biggest food bloggers Jenny’s blog (recipe here). These cookies could be varied in eternity by just substituting the marshmallows for something else of your choice! The cookies are easy to make, and soft on the outside (which I really like). They are on the sweet side – so if you don’t want that, reduce the amount of sugar. I would recommend keeping the sugar coating though – just because it looks so adorable!

Recipe / Recept 

120 g of butter / 120 g smör 

0.4 cups of brown sugar / 1 dl farinsocker 

2 cups of flour / 5 dl vetemjöl 

0.6 cups of cacao powder / 1.5 dl kakao

1 tsp of baking soda / 1 tsk bikarbonat 

1 tsp of salt / 1 tsk salt 

0.8 cups of sugar / 2 dl socker 

2 eggs / 2 ägg

1 tsp of corn syrup / 1 tsk sirap 

Filling / Fyllning 

Marshmallows / Marshmallows 

Cane sugar / Strösocker 

1.Preheat the oven to 390 F. / Sätt ugnen på 200 grader.

2. Mix together sugars and butter. / Vispa ihop ägg och smör.

3. Add in flour and cacao powder. / Blanda i mjöl och kakao.

4. Add in the eggs. / Blanda i äggen.

5. Add the syrup. / Blanda i sirapen.

6. Cut the marshmallows in smaller pieces. / Klipp marshmallown i mindre bitar.

7. Create small balls with the marshmallow piece in the middle, it should be completely covered. / Rulla små bollar med marshmallown i mitten, den ska vara helt täckt.

8. Roll in cane sugar. / Rulla i strösocker.

9. Bake for about 5-7 min, until they’re just a little cracked at the top. / Grädda i ca 5-7 min, eller tills de precis spruckit något på toppen.

10. Let cool. / Låt svalna.

11. Done! / Klart!

Rose Water Cake with Berry Yoghurt Frosting – Rosenvatten Kaka med Yoghurt och Bär Frosting


Since I bought the rose water in the store, I got a slight obsession with it…. I know that some people have a really hard time liking the taste – and it is quite special. Although, I feel like it has a luxurious feeling too it – it’s not something you would eat everyday. To bake with rose water was really fun, because the consistency of the cake came out super smooth! It’s hard to explain, but it was something that I hadn’t been able to accomplish before. On top of the cake, I made a berry and greek yoghurt frosting – but this is of course optional. I do think that you should go and buy some rose water though – you will be happily surprised!

Recipe / Recept

7 tbsp of butter / 100 g smör 

1.4 cups of sugar / 3 dl socker 

1 egg / 1 ägg

2 cups of flour / 5 dl mjöl

2 tsp of baking powder / 2 tsk bakpulver 

1 cup of milk / 2.5 dl mjölk

1.5 tsp rose water / 1.5 tsk rosen vatten


1 cup of pureed berries (any type will do) / 2.5 dl slätt mixade bär (valfri sort)

0.5 cups of greek yoghurt / 1.75 dl yoghurt 

0.4 cups of icing sugar / 1 dl florsocker

1. Preheat the oven to 340. / Sätt ugnen på 175 grader.

2. Spray a spring form with non-stick spray. / Smöra och bröa en form med löstagbara kanter.

3. Mix butter and sugar. / Vispa smör och socker.

4. Add the egg. / Tillsätt ägg.

5. Add half the flour, half the baking powder and half the milk. Mix well. / Tillsätt hälften av mjölet, bakpulvret och mjölken. Blanda.

6. Add the other halves. / Tillsätt resten.

7. Add the rose water. / Tillsätt rosen vatten.

8. Bake for about 40-45 min. / Grädda i 40-45 min.

9. Let cool. / Låt svalna.

10. Mix all the ingredients for the frosting. / Blanda alla ingredienser till frostingen.

11. Spread the frosting on the cake. / Bred på frostingen på kakan.

12. Done! / Klart!


Chocolate Cupcakes with Rose Water Frosting – Chokladcupcakes med Rosenvatten Frosting


I’ve realized over the past days working through my recipe index how my baking has changed, partly because after a while, all your traditional go to bakes has been uploaded, and you’re challenged to try new things. This led me to buy some rose water extract on bottle. I had never before used rose water up until a couple of days ago – but I’m already a fan. If you put it in cakes, they become extremely moist and soft (keep your eye’s out for a recipe coming soon), and the flavor is just something new and different. The cupcakes I used a regular chocolate cupcake recipe for, and the frosting recipe I found on this blog, although I added some more cream and rose water to mine, since I believed it was a little too thick before. Sprinkled with silver sprinkles and glittering stars, these would be perfect in a fairy tale.

Recipe / Recept 

3 eggs / 3 ägg

125 g of butter / 125 g smör 

2.4 cups of sugar / 3 dl socker 

2.4 cups of flour / 3 dl mjöl

0.3 cups of water / 3/4 dl vatten

1.5 teaspoons of baking powder / 1.5 tsk bakpulver

1 teaspoon of vanilla extract / 1 tsk vaniljsocker

4 tbsp of cacao powder / 4 msk kakao

Frosting / Frosting

1 stick of butter / 115 g smör

2 cups icing sugar / 5 dl florsocker

1 tsp vanilla / 1 tsk vaniljsocker 

1/3 cup whipping cream / 0.75 dl vispgrädde

0.5 tsp of rose water / 0.5 tsk rosenvatten extrakt

2 drops of red food coloring / 2 droppar röd karamellfärg

1. Preheat the oven to 350 F. / Sätt ugnen på 175 grader.

2. Whisk sugar and eggs fluffy and almost white, melt the butter. / Vispa socker och ägg pösigt och nästan vitt, smält smöret.

3. Mix all the dry ingredients together separately. Add the flour mix to the egg and sugar mix, be careful and add a little at a time./ Blanda alla torra ingredienser i en bunke. Tillsätt mjölblandningen försiktigt till ägg och socker mixen.

4. Add melted butter and water. / Tillsätt smält smör och vatten.

5. Put down muffin-thins in a muffin-pan, and fill 3/4 with batter. / Sätt formar i en muffinplåt, fyll till 3/4 med smet.

6. Bake for about 15 min. / Grädda i ca 15 min.

7. Let cool completely. / Låt svalna helt.

8. Mix the butter and icing sugar together for about 2 min. / Vispa socker och florsocker i ca 2 min.

9. Add vanilla and cream. / Tillsätt vaniljsocker och grädde.

10. Mix for about 2 more min. / Vispa i ca 2 min till.

11. Add the rose water. / Blanda i rosen vattnet.

12. Blend in the food coloring. / Vispa i karamellfärgen.

13. Ice the cupcakes and sprinkle with silver sprinkles. / Glasera cupcakesen och strö över silverkulor.

14. Done! / Klart!
