Snack Hacks: Apple Cookies


Fastest snack! Perfect for breakfast, afternoon or evening :).

Recipe / Recept:

1 Apple / 1 Äpple

Cashew Butter / Cashewsmör 

Nuts & seeds / Nötter & frön

Chocolate Chips / Chocolate Chips 

1. Slice the apple. / Skiva äpplet.

2. Spread on cashew butter. / Bred på cashewsmör.

3. Top with nuts and chocolate chips (opitonal). / Toppa med nötter, frön och choklad (om man vill).


Snack Hacks: Strawberry Stuffed French Toast


Recipe / Recept 

2 pieces of sourdough toast / 2 skivor surdegsbröd

1 egg / 1 ägg 

0.4 cups of milk / 1 dl mjölk 

4 strawberries / 4 jordgubbar 

cinnamon sugar / kanelsocker 

1.Whisk together the egg and the milk. / Vispa ihop ägg och mjölk.

2. Slice the strawberries. / Skiva jordgubbarna.

3. Roll out the bread slices. / Kavla ut brödet.

4. Add in the strawberry slices. / Lägg på jordgubbsskivorna.

5. Fold over the bread creating a closed pocket. / Vik över brödet så att det blir som en sluten ficka.

6. Dip in the egg mix. / Doppa i äggblandningen.

7. Fry and turn in cinnamon sugar. / Stek och vänd i kanelsocker.

8. Done! / Klart!

Quinoa Coconut Oatmeal – Quinoa Kokos Gröt


Here comes another recipe for oatmeal! Breakfast goes between being my favorite meal to my least favorite meal during different periods. It’s fun to have a nice breakfast, but sometimes time is crunched. I made double of this oatmeal, so that I can have the other half tomorrow!

Recipe (2 servings) / Recept (2 portioner) 

0.5 cups of quinoa / 1.25 dl quinoa 

1 cup of coconut milk / 2.5 dl kokosmjölk (den sorten man köper på tetra pack)

0.5 cups of water / 1.25 dl vatten 

1 tbsp rolled oats / 1 msk havregryn 

1 tbsp of chia seeds / 1 msk chia frön 

1.Mix quinoa, coconut milk and water in a pot and bring to a boil. / Blanda quinoa, kokosmjöl och vatten i en kastrull och koka up.

2. Add a lid and let simmer for about 15-20 min or until the liquid is almost gone. / Sätt på ett lock och låt puttra ca 20-25 min eller tills vätskan nästan är borta.

3. Add oats and chia seeds and boil for another 2 min. / Lägg i havregryn och chiafrön och koka i 2 min till.

4. Done! / Klart!

5. Add toppings of choice. / Toppa med valfria tillbehör.


Carrot Cake Oatmeal – Gröt med smak av Morotskaka


I’ve been reading on a couple of blogs about a carrot cake oatmeal. I thought it sounded delicious, since carrot cake is one of my favorite cakes (my best recipe is here). I didn’t have everything that I needed for the recipes that I had seen online, so I made my own version (and of course all the ingredients are substitute-able for whatever you have at home…). I added chia seeds as well, in order to amp up the protein! Enjoy!

Recipe (1 large bowl) / Recept (1 stor portion) 

1 small carrot or 4 mini carrots / 1 liten morot eller 4 mini morötter

0.4 cups of rolled oats / 1 dl havregryn 

0.8 cups of water / 2 dl vatten 

0.5 tsp cardamom / 0.5 tsk kardemumma

0.5 tsp cinnamon / 0.5 tsk kanel 

0.5 tsp of ginger (fresh or dried) / 0.5 tsk ingefära (färsk eller torkad)

1 tbsp of chia seeds / 1 msk chia frön 

1 tbsp greek yogurt / 1 msk grekisk yoghurt 

a drizzle of honey / lite honung 

1. Grate the carrots. / Riv morötterna.

2. In a pot, add carrots, oats, water and spices together. / I en kastrull, blanda morötter, havregryn och kryddor.

3. Bring to boil and add in the chia seeds. / Koka upp och blanda i chia frön.

4. Let simmer on low heat until the water is gone, stir occasionally. / Låt koka på svag värme och rör då och då.

5. Take of the heat and top with yogurt and honey. / Ta av från värmen och toppa med grekisk yoghurt och honung.

6. Enjoy!



Pancakes with Bananas – Pannkakor med Banan


So this really was an experiment, but it turned out well. Pancakes comes in so many shapes, forms, flavors and ingredients. My favorites (as mentioned a million times) are the classic banana pancakes. But – sometimes there’s a clear carb-craving that can only be satisfied by real flour pancakes. Although, I still love the flavor of banana, therefore, I tried switching some of the flour for mashed banana, and it turned out delicious and VERY filling. Try it our next time you’re making pancakes for breakfast!

Recipe / Recept

0.5 cups of flour / 1.25 dl mjöl

2 tsp of baking powder / 2 tsk bakpulver

2 tbsp of sugar / 2 msk socker

a pinch of salt / en nypa salt

1 cup of milk / 2.5 dl mjölk

1 egg / 1 ägg

2 mashed bananas / 2 mosade bananer

1. Mash the banana. / Mosa bananen.

2. Mix all ingredients together. / Blanda alla ingredienser samman.

3. Heat a pan with butter. / Hetta upp en panna med smör.

4. Make small pancakes, when they bubble, flip. / Gör små pannkakor, när dom bubblar, vänd.

5. Done! / Klart!


Cottage Cheese & Flax Seed Pancakes – Keso & Flaxfrö Pannkakor


Yes! Finally some new pancake recipes. I know there’s definitely hasn’t been enough breakfast inspiration on the blog lately – but here it comes! Perfect weekend (or luxury weekday) recipe! These Pancakes are flour free, healthy, filled with protein and generally awesome. They were easy to make, and can, as banana pancakes, be seasoned with whatever you would like. If you want to increase the amount of pancakes, just keep the egg / cottage cheese ratio stable, and there shouldn’t be an issue.

Recipe / Recept 

3 eggs / 3 ägg

3 big tbsp of cottage cheese / 3 stora msk keso

1 tbsp flax seeds / 1 msk flaxfrön 

1 tbsp chia seeds / 1 msk chia frön 

cinnamon & cardamom / kanel & kardemumma 

1. Add eggs, cottage cheese and flax seeds together. / Blanda ägg, keso och flaxfrön.

2. Mix with a hand mixer. / Mixa med en stavmixer.

3. Add in chia seeds and spices. / Lägg i chia frön och kryddor.

4. Cook the pancakes in a little butter, flip when they bubble. / Stek pannkakorna i lite smör. Vänd när dom bubblar.

5. Serve with yoghurt, fresh fruit, syrup, berries or anything else! / Servera med färsk frukt, yoghurt, sirap, bär eller något annat!

6. Done! / Klart!


Mini Scones w. Cinnamon & Cranberries – Mini Scones med Kanel och Tranbär


Every time I make scones, I think of my mom. She was the scones “master” in our house, and it was always a really happy, and really good day when I walked down the stairs to our kitchen, and the whole kitchen smelled like scones. Now a days, there’s not as many scones baked or made, but whenever I do make them, it makes me happy. As I’ve mentioned in this post, we usually bake scones in a different way than people do in the US. Last time I baked, I used a muffin thin in order to make the scones smaller and more symmetric. I added some cinnamon to half of the dough, and some dried cranberries to the other half. The scones turned out super cute and delicious. I believe scones are the absolute best right out of the oven with butter and a cup of coffee :).

Recipe / Recept

2 cups of flour / 5 dl mjöl

2 tsp of baking powder / 2 tsk bakpulver

1 tsp of salt / 1 tsk salt

0.8 cups of milk (soy or rice works as well as regular) / 2 dl mjölk (soya eller ris funkar lika bra som vanlig)

5 tbsp of butter (about 2/3 of a stick) / 75 g smör

some cinnamon / lite kanel 

some cranberries / like torkade tranbär

1. Preheat the oven to 480 F. / Sätt ugnen på 250 grader.

2. Mix flour, baking powder and salt in a bowl. / Blanda mjöl, salt och bakpulver i en bunke.

3. Add the milk. / Tillsätt mjölken.

4. Cut the butter in pieces and mix it in with your hands. / Skär smöret i bitar och blanda till en deg med hjälp av dina händer.

5. Part the dough in two. / Dela degen i två.

6. Add cinnamon to one part, and cranberries to the other. / Lägg i kanel i den ena delen och tranbär i den andra.

7. Prepare a muffin thin. / Förbered en muffinplåt.

8. Part the dough’s in 8’s (making 16 scones in total). / Dela degarna i 8. Det blir 16 scones totalt.

9. Roll into small balls and put in the thin. / Rulla små bollar och lägg i plåten.

10. Take a fork and pick on the top of the scones. / Ta en gaffel och picka på toppen av sconsen.

11.  Bake for about 12-15 minutes or until golden. / Grädda i ca 12-15 min eller tills gyllene.

12. Serve immediately. / Servera direkt.

13. Done! / Klart!


Delicious Swedish Pancakes – Fantstiska Pannkakor


What is better than pancakes?! Right, nothing. If you’re really craving them, there’s nothing that can satisfy the craving other than making some pancakes. Swedish pancakes are kind of a mixture of a crepe and an American Pancake. They’re thin but not super thin, but they’re not sweet. Serve them with sugar, jam or fruits and indulge in the deliciousness of pancakes!


Recept (12 tunna) / Recipe (12 thin)

3 ägg / 3 eggs

6 dl mjölk / 2.4 cups of milk

2 msk smält smör / 2 tablespoon of melted butter

1/2-1 tsk salt / 1/2 – 1 teaspoon of salt

2.5 dl mjöl / 1 cup of flour

1. Smält smöret och vispa ihop alla andra ingredienser. / Melt the butter and whisk together with all other ingredients. Make sure there are no lumps.

2. Lägg ca 1/2-1 dl smet i stekpannan beroende på hur stor stekpannan är. Lossa den försiktigt i kanterna och vänd när den blivit lite “bubblig” på ovansidan. / Put 0.2-0.4 cups of mix in the pan depending on how big it is. Loosen it carefully in the edges and flip it when it’s bubbly on the top (and it doesn’t break, it takes some time to get the technique in.)

3. Klart! / Done!



Frozen Pineapple and Banana Smoothie – Frusen Ananas och Banan Smoothie


Sometimes life just calls for a smoothie. This one is inspired by summer. I used frozen pineapple, which I bought. Although, it’s a great way of preserving fruits and berries before they go bad by cutting them in pieces and freeze. Perfect for the smoothie cravings later on! The pineapple was great in combination with a banana and some soy milk.


Ibland är man helt enkelt bara sugen på en smoothie. Denna inspirerad av sommaren. Jag använde frusen ananas, som jag köpte. Man kan alltid skära upp frukt och bär innan den blir gammal och frysa in om man vet att man inte kommer hinna äta den. På så sätt spar man både på pengar och miljön, samtidigt som man har perfekta ingredienser i frysen till de dagar då man blir sugen på en smoothie! Ananasen passade perfekt tillsammans med en banan och lite soya mjölk.

Recipe / Recept

about 2/3 cup of pineapple / ca 2 dl ananas

1 banan / 1 banan 

about 1/2 cup of soy milk / ca 1.25 dl soya mjölk

1. Blend everything together. / Mixa allt.

2. Top with some pineapple. / Toppa med lite ananas.

3. Serve immediately. / Servera genast.

4. Done! / Klart!


Lemon Ricotta “Pancake” – Citron och Ricotta “Pannkaka”


I don’t really feel like I’ve adjusted to the sizes of the portion here yet, even though it’s been almost 4 full semesters. If you would order pancakes in Sweden, you’d get three thin crepes, if you order pancakes here, you usually get a mountain of food. Yesterday, we went to a place called The Icebox for breakfast. A super nice place, with very light interior and a delicious menu. We ordered a Lemon Ricotta Pancake with Lemon Creme Cheese Frosting, I don’t think anyone could’ve resisted that… It sounded delicious, and it was. Although, it was not a traditional pancake, it was a cake in a pan. More like a spongecake- like thing, with a pancake outside. Delicious, but huge. We could’ve been 4 people sharing this cake. However, I’ve never seen a pancake like this before. It was a fun and different way of presenting the traditional pancake, and it definitely made us wanna come back to try different items on the menu.


Jag tror inte riktigt att jag ännu har vant mig vid storleken på portionerna här, även fast jag snart har bott här i 4 hela terminer. Om man beställer pannkakor i Sverige, får man ju 3 tunna vanliga pannkakor. Beställer man pannkakor här, får man oftast ett helt berg av mat. Igår åt vi frukost på ett café/resturang som heter The Icebox. Ett väldigt mysigt och ljust ställe med en underbar meny. Vi beställde Citron och Ricotta Pannkakor med Citron och Creme Cheese Frosting. Jag tror inte någon hade kunnat motstå…? Det låter ju så otroligt gott, vilket det också var. Men det var inte riktigt en vanlig pannkaka, det var en hel kaka som var gjord i en stekpanna. Mer som en sockerkaks- liknande sak med ett pannkaks- yttre. Så gott, men helt enorm. Vi hade kunnat vara 4 personer som delade på denna kaka. Hur som helst har jag aldrig tidigare sett en pannkaka likt denna förut. Det var ett roligt och annorlunda sätt att presentera en traditionell amerikansk pannkaka på, och gjorde oss väldigt nyfikna på hur resten av alternativen serverades.
