Snack Hacks: Zucchini Chips

Recipe / Recept 

1 zucchini / 1 zucchini 

olive oil / olivolja

salt / salt 

1.Preheat the oven to 400F. / Sätt ugnen på 200 grader.

2. Cut the zucchini in thin slices. / Skär zucchinin i tunna skivor.

3. Place on a parchement paper on a baking thin and drizzle olive oil over. / Lägg skivorna på ett babakplåtspapper på en plåt och ringla över olivolja.

4. Flip until covered. / Vänd tills alla skivor är täckta.

5. Bake for about 25-35 min depending on thickness. / Grädda i ca 25-35 min beroende på tjocklek.

6. Let cool and add salt. / Låt svalna och salta.

7. Done! / Klart!

Snack Hacks: Warm Cinna Spiced Apples

Recipe / Recept 

1 Apple / 1 Äpple 

1 tbsp of sugar / 1 msk socker 

0.5 tbsp of cinnamon / 0.5 msk kanel 

1 tsp of coconut oil / 1 tsk kokosolja 

yogurt / yoghurt 

1.Slice the apple. / Skiva äpplet.

2. Mix the cinnamon and sugar. / Blanda socker och kanel.

3. Lightly coat the apple slices in the cinnamon sugar. / Vänd äppelskivorna i kanel-sockret.

4. Heat up a pan with coconut oil. / Värm up en panna med kokosolja.

5. Sautée the apples for about 5 min on the first side and 2 min on the other side, or until a little golden. / Stek äppelskivorna ca 5 min på första sidan och 2 min på den andra sidan, eller tills gyllene.

6. Serve with yogurt. / Servera med yoghurt.

7. Done! / Klart!

Mint, Lemon and Green Pea Spread – Mynta, Citron och Ärt Dip

Yeeees! I don’t know if any of you remember, but (almost 2 years…) a while ago I posted a recipe of mashed peas. I know it seems strange but it is so absolutely delicious! This recipe I found in a magazine, and tweaked it to my favor. It looks so pretty and it is seriously addicting. You could eat it with just crackers or something similar, or have it as a dip for chicken or fish. The only thing that is important is that you try it!

Recipe / Recept

200 g frozen green peas / 200 g frysta gröna ärtor

1 plant of fresh mint / 1 kruka färsk mynta

1/3 lemon, zest and juice / 1/3 citron, saft och skal

1 tbsp-ish olive oil / 1 msk-ish olivolja 

salt & pepper / salt & peppar 

1. Boil the peas. / Koka ärtorna

2. But everything into a food processor. / Lägg allt i en mixer.

3. Mix everything together and add salt and pepper after taste. / Mixa allt och smaka av med salt och peppar.

4. Done! / Klart!

Rainbow Pie – Regnbågspaj

There’s a good trend going on within the food social media sphere. We’re celebrating the equal marriage rights in the US, and the colors are filling up both instagram and blogs! There’s no better thing to celebrate than love, and here’s my contribution to the celebrations! This is a fruit pie with a sour cream filling. Delicious, quick and easy. Adjust your toppings after what you like and have at home. Enjoy!

Recipe / Recept 

Piecrust / Pajdeg

200 g of butter / 200 g smör

2 cups of flour / 5 dl mjöl

0.2 cups of sugar / 1/2 dl socker

1/2 tsp baking powder / 1/2 tsk bakpulver

Filling / Fyllning

1.3 cups of Sour cream / 3 dl Creme Fraiche

1 tbsp vanilla / 1 msk vaniljsocker

0.8 cups of icing sugar / 2 dl florsocker

Garnish / Topping 

Fruit of different kinds / Frukt i alla dess former

1. Preheat the oven to 390 F. / Sätt ugnen på 200 grader.

2. Mix together all the ingredients to the pie crust. / Mixa ihop alla ingredienser till pajdegen.

3. Bake for 15-20 min, it should be a little golden. / Grädda i 15-20 min, den ska vara gyllene.

4. Let cool. / Låt svalna.

5. Mix together all the ingredients for the filling, make sure that you powder the sugar in. / Blanda alla ingredienser till fyllningen, sikta i sockret.

6. Spread on the pie crust. / Bred på fyllningen.

7. Garnish with fruit. / Garnera med frukt.

8. Done! / Klart!

Chocolate and Vanilla Dream Swiss Roll – Dröm Rulltårta

For those of you who follow my instagram, you know I baked a swiss roll about 2 weeks ago. As a child, this was probably one of my favorite pastries. It’s a fluffy chocolate cake and a vanilla cream filling. It’s a little tricky to make it stay together, but very quick and easy to make!

Recipe / Recept

Cake / Botten

3 eggs / 3 ägg

0.6 cups of sugar / 1.5 dl socker

0.3 cups of potato flour / 0.75 dl potatismjöl

2 tbsp of cacao powder / 2 msk kakao

1 tsp baking powder / 1 tsk bakpulver

some sugar / lite socker

Filling / Fyllning

7/8 stick of butter / 100 g smör

0.8 cups of icing sugar / 2 dl florsocker

2 tsp of vanilla / 2 tsk vaniljsocker

1 egg yolk / 1 ägg gula

1. Preheat the oven to 480 F. / Sätt ugnen på 250 grader.

2. Whisk egg and sugar together until fluffy. / Vispa ägg och socker fluffigt.

3. Add in all other ingredients carefully. / Blanda i alla andra ingredienser försiktigt.

4. On a lined baking sheet, spread out the batter. / På en plåt med bakplåtspapper, sprid ut smeten.

5. Bake for 6 min. / Grädda i 6 min.

6. Prepare another baking sheet with sugar on. / Förbered ett annat bakplåtspapper strött med socker.

7. As soon as the cake comes out, flip it over on the sugared sheet. / Så snabbt kakan kommer ut, vänd ner den på det sockrade pappret.

8. Carefully peel of the baking sheet. / Dra försiktigt bort bakplåtspappret.

9. Let cool. / Låt svalna.

10. Whisk together all ingredients for the filling. / Vispa ihop alla ingredienser till fyllning.

11. Spread on the cake. / Bred på botten.

12. Roll together with the baking sheet as your help. / Rulla ihop med hjälp av bakplåtspapper.

13. Cut in pieces. / Skär i skivor.

Jam & Cardamom Cookies – Sylt & Kardemumma Kakor

And all of a sudden I’m at the end of my semester again. First week of school it always seems so far until the end, yet, every semester it goes by as quick. Thanksgiving break, a week of classes and then finals. This also means that this is the third semester I’m keeping up (well, at least trying to) with the blog – and I’m so happy I do. Even though it’s much harder to after 250+ posts invent new things, find the time amongst all other activities, and, maybe mostly, have the time to post it (I still have some posts since summer that are not yet up….). Here comes a recipe of Jam & Cardamom cookies. I love jam (or thumbprint) cookies, but these comes with a twist. I put an egg in the dough and decreased the amount of flour slightly, this created a much softer cookie. Cardamom can be put in anything (and make it absolutely delicious 🙂 )

Recipe / Recept 

1.8 sticks of butter / 200 g smör 

0.4 cups of sugar / 1 dl socker

1 tsp vanilla / 1 tsk vaniljsocker

1.6 cups of flour / 4 dl mjöl

1 tsp of baking powder / 1 tsk bakpulver

1 tsp of cardamom / 1 tsk kardemumma

1 egg / 1 ägg

jam /sylt

1. Preheat the oven to 430 F. / Sätt ugnen på 220 grader.

2. Mix all ingredients. / Blanda alla ingredienser.

3. Roll small balls and make a thumbprint in them. / Rulla små bollar och gör ett litet tumavtryck i dom.

4. Put in some jam. / Lägg i sylt.

5. Bake for about 8 min. / Grädda i ca 8 min.

6. Done! / Klart!

Mini Scones w. Cinnamon & Cranberries – Mini Scones med Kanel och Tranbär

Every time I make scones, I think of my mom. She was the scones “master” in our house, and it was always a really happy, and really good day when I walked down the stairs to our kitchen, and the whole kitchen smelled like scones. Now a days, there’s not as many scones baked or made, but whenever I do make them, it makes me happy. As I’ve mentioned in this post, we usually bake scones in a different way than people do in the US. Last time I baked, I used a muffin thin in order to make the scones smaller and more symmetric. I added some cinnamon to half of the dough, and some dried cranberries to the other half. The scones turned out super cute and delicious. I believe scones are the absolute best right out of the oven with butter and a cup of coffee :).

Recipe / Recept

2 cups of flour / 5 dl mjöl

2 tsp of baking powder / 2 tsk bakpulver

1 tsp of salt / 1 tsk salt

0.8 cups of milk (soy or rice works as well as regular) / 2 dl mjölk (soya eller ris funkar lika bra som vanlig)

5 tbsp of butter (about 2/3 of a stick) / 75 g smör

some cinnamon / lite kanel 

some cranberries / like torkade tranbär

1. Preheat the oven to 480 F. / Sätt ugnen på 250 grader.

2. Mix flour, baking powder and salt in a bowl. / Blanda mjöl, salt och bakpulver i en bunke.

3. Add the milk. / Tillsätt mjölken.

4. Cut the butter in pieces and mix it in with your hands. / Skär smöret i bitar och blanda till en deg med hjälp av dina händer.

5. Part the dough in two. / Dela degen i två.

6. Add cinnamon to one part, and cranberries to the other. / Lägg i kanel i den ena delen och tranbär i den andra.

7. Prepare a muffin thin. / Förbered en muffinplåt.

8. Part the dough’s in 8’s (making 16 scones in total). / Dela degarna i 8. Det blir 16 scones totalt.

9. Roll into small balls and put in the thin. / Rulla små bollar och lägg i plåten.

10. Take a fork and pick on the top of the scones. / Ta en gaffel och picka på toppen av sconsen.

11.  Bake for about 12-15 minutes or until golden. / Grädda i ca 12-15 min eller tills gyllene.

12. Serve immediately. / Servera direkt.

Delicious Swedish Pancakes – Fantstiska Pannkakor

What is better than pancakes?! Right, nothing. If you’re really craving them, there’s nothing that can satisfy the craving other than making some pancakes. Swedish pancakes are kind of a mixture of a crepe and an American Pancake. They’re thin but not super thin, but they’re not sweet. Serve them with sugar, jam or fruits and indulge in the deliciousness of pancakes!

 

Recept (12 tunna) / Recipe (12 thin)

3 ägg / 3 eggs

6 dl mjölk / 2.4 cups of milk

2 msk smält smör / 2 tablespoon of melted butter

1/2-1 tsk salt / 1/2 – 1 teaspoon of salt

2.5 dl mjöl / 1 cup of flour

1. Smält smöret och vispa ihop alla andra ingredienser. / Melt the butter and whisk together with all other ingredients. Make sure there are no lumps.

2. Lägg ca 1/2-1 dl smet i stekpannan beroende på hur stor stekpannan är. Lossa den försiktigt i kanterna och vänd när den blivit lite “bubblig” på ovansidan. / Put 0.2-0.4 cups of mix in the pan depending on how big it is. Loosen it carefully in the edges and flip it when it’s bubbly on the top (and it doesn’t break, it takes some time to get the technique in.)

Quick Smoked Salmon & Vegetable Pasta – Snabb Rökt Lax & Grönsakspasta

First week of school is just finished! This is my third year at American University, and I can’t believe how fast time goes by! After an amazing summer with sun and time for longer dinners, it’s time for the quick recipes to come back! This pasta was made in a second, and is both fresh, delicious and filling at the same time. The combo of vegetables I used is not a necessity, you can put in a little of whatever you like really. I hope you’ve had a great start of this semester and are looking forward to another great year!

Recipe / Recept 

Pasta / Pasta

1 package of smoked salmon / 1 paket rökt lax

1 tomato / 1 tomat

2 green onions / 2 mini salladslökar 

Fresh Spinach / Färsk Spenat 

1 Avocado / 1 Avokado

Parmesan Cheese / Parmesanost 

1. Boil the pasta. / Koka pastan.

2. Meanwhile; cut the tomato and chop the onion. / Undertiden; skär tomaten och hacka löken.

3. Drain the pasta. / Häll av pastan.

4. In the same pot, heat it up with butter and cook the onions, tomato, salmon and spinach. / I samma kastrull, lägg i lite smör och stek löken, tomaten, laxen och spenaten.

5. Mix in the pasta and top with avocado and parmesan. / Blanda i pastan och toppa med avokado och spenat.

6. Done! / Klart!

Summery Raspberry Swiss Roll / Somrig Hallon Rulltårta

Recipe / Recept 

3 eggs / 3 ägg

0.6 cups of sugar /1.5 dl socker

0.8 cups of flour / 2 dl mjöl

1 tsp baking powder / 1 tsk bakpulver 

1 tbsp of milk / 1 msk mjölk

1.2 cups of cream / 3 dl grädde

raspberries / hallon

a little sugar / lite socker

1. Heat the oven to 350 F. / Sätt ugnen på 175 grader.

2. Mix sugar and eggs until super light yellow and fluffy. / Vispa ägg och socker tills det är ljusgult och fluffigt.

3. Carefully add in flour and baking powder. Add the milk. / Tillsätt mjöl och bakpulver försiktigt. Tillsätt mjölken.

4. On a baking sheet, on a non stick paper, spread the batter out evenly. / På en plåt med bakplåtspapper, bred ut smeten jämt i en rektangel.

5. Bake for about 5 min, until a little golden. / Grädda i ca 5 min, tills lite gyllene.

6. Sprinkle over sugar when it’s still hot. / Strö på socker när den fortfarande är varm.

7. Add another non stick paper on top. / Lägg på ett till bakplåtspapper på toppen.

8. Flip the cake. / Vänd på kakan.

9. Carefully remove the non stick paper from the top. If it’s stuck, brush on some water and try again. / Dra försiktigt av pappret från toppen. Om det inte lossnar, pensla försiktigt på lite vatten och försök igen.

10. Let cool. / Låt svalna.

11. Whisk the cream. / Vispa grädden.

12. Mash in the raspberries. / Blanda i hallon.

13. Spread on the cake. / Bred på botten.

14. Carefully roll together, use the non stick paper as your help. / Rulla försiktigt ihop, använd bakplåtspapper som hjälp.

15. Cut in slices. / Skär i skivor.

16. Done! / Klart!
