Lemon Sticky Cake with Lime Frosting – Citron Kladdkaka med Lime Frosting

Sometimes, the world just calls for something pretty. I have a weird love for icing bags, and icing things in general. It’s one of my favorite things about baking, and I oftentimes try making something that can be iced (I’ve heard you can make cookies with an icing bag?!). However, I’ve lately seen multiple recipes circling around the blog sphere of Lemon Sticky Cake, basically a lemonbar without the crust. I’ve been wanting to try, but haven’t gotten around too. So, the other day when I realized I had a couple of lemons left that needed to be used before going bad, I was thrilled. And surprised. Wow, this cake was SO easy to make (honestly) and highly appreciated. As much as I love chocolate, it is nice to sometimes be able to switch it up, and this cake will definitely become my go to. But then, I realized, there was nothing to ice. So, I made a lime, cream cheese frosting to decorate it with, and used that as a substitute for serving it with whipped cream. I then went a little crazy with different sprinkles I found, just because sometimes you just need a cake that makes you happy. Again, there are multiple recipes on this cake – here’s my version. Enjoy!

Recipe / Recept

Cake / Kaka

3 small lemons / 3 små citroner

3 eggs / 3 ägg

1.5 sticks of butter / 150 gram smör

0.8 cups of flour / 2 dl mjöl

1.2 cups of sugar / 3 dl socker

1 tsp vanilla / 1 tsk vaniljsocker

Frosting / Frosting

1/2 cup heavy whipping cream / 0.75 dl vispgrädde

1 package of light cream cheese / 1 paket cream cheese light

1 cup icing sugar / 2.5 dl florsocker

3 limes, peel and juice / 3 lime, skal och saft

0.5 tsp vanilla / 0.5 tsk vaniljsocker

1. Preheat the over to 340 F. / Sätt ugnen på 175 grader.

2. Peel and juice the lemons. / Riv skalet och pressa saften från citronerna.

3. Melt the butter. / Smält smöret.

4. Remove from the heat. / Ta bort från plattan.

5. Mix in all other ingredients. / Blanda i alla andra ingredienser.

6. Bake in a spring form. / Grädda i en form med löstagbara kanter.

7. Bake for about 20 min. / Grädda ca 20 min.

8. Let cool. / Låt svalna.

9. Whisk the cream for the frosting. / Vispa grädden till frostingen.

10. Mix in all other ingredients. / Blanda i alla andra ingredienser.

11. Ice the cake. / Frosta kakan.

12. Done! / Klart!

The day of Swedish Chocolate Cake – Kladdkakans Dag

So, apparently it’s “kladdkakans” dag in Sweden tomorrow. A kladdkaka is a very gooey- brownielike chocolate cake that most Swedes can make without a recipe…. Still, there are so many variations of a kladdkaka and a fun cake to experiment with. On the blog, I’ve had multiple recipes and post variating my Kladdkaka, here’s a few for inspiration:

20! This weekend I turned twenty. Two decades of my life has passed, and I’m no longer a teenager. This post gives you a recipe of a Swedish Sticky Chocolate Cake, layered with Caramel that’s been cut into pieces for a perfect snack at a party, topped with raspberries. Mmmm… Try it and love it. (It’s perfectly fine to make the cake without the caramel too…)

20! Denna helg fyllde jag 20. Två år utav mitt liv har passerat och jag är inte längre tonåring. Det här inlägget ger dig ett recept på en kladdkaka med kolatäcke, som blivit skuren i bitar och dekorerats med hallon. Ett perfekt drink tillbehör! Mmm.. Prova och bli förälskad…

Recipe / Recept

Sticky Cake / Kladdkaka

1 stick of butter / 100 g smör

0.6 cups of flour / 1.5 dl mjöl

2 eggs / 2 ägg

4 tbsp of cacao powder / 4 msk kakao

1 cup of sugar / 2.5 dl socker

0.5 tsp of salt / 0.5 tsk salt

1 tsp of vanilla extract / 1 tsk vaniljsocker

Caramel / Kola

0.8 cups of heavy whipping cream / 2 dl grädde

0.8 cups of sugar / 2 dl socker

0.6 cups of corn syrup / 1.5 dl sirap

2 tbsp of butter / 2 msk smör

1. Preheat the oven to 350 F. / Sätt ugnen på 175 grader.

2. Melt the butter in a pot. / Smält smöret i en kastrull.

3. Add the rest of the ingredients into the butter. Mix. / Tillsätt alla andra ingredienser till kakan i kastrullen.

4. Bake in a spring form for about 15 min or just until set. / Grädda i en springform i ca 15 min eller tills den precis stelnat på ytan.

5. Let cool. / Låt svalna.

6. Bring syrup, sugar and cream to boil. / Koka upp socker, sirap och grädde.

7. Let boil for about 13 min or until you can roll a small ball when putting it in cold water. / Koka i ca 13 min eller tills den passerar kultestet.

8. Add the butter and stir until melted. / Tillsätt smöret och rör tills det är smält.

9. Cover the cake with the caramel. / Häll kolan över kakan.

10. Let cool. / Låt svalna.

11. Klart! / Done!

Anna-Carins Chokladtårta Deluxe – Anna-Carin’s Chocolate Cake Deluxe

Här kommer ytterligare en chokladtårta. Detta recept kommer från min mammas bästa kompis Anna-Carin. Kakan är otroligt kladdig och mäktig, och är perfekt för någon som älskar choklad. Tårtan är lätt att förbereda dagen innan och kan stå i kylen, den blir nästan bara godare utav det! Om du vill bjuda på en väldigt dekadent efterrätt är denna tårta precis rätt! Alla dina gäster kommer att fråga om receptet… / Here’s another chocolate cake for you! This recipe comes from my mom’s best friend Anna-Carin. The cake is increadibly gooey and tastes almost just like the batter (which is the best part, right?!), it’s perfect for any chocolate lover. The cake is easy to prepare and tastes even better after one night in the fridge. If you want to serve a very decadent dessert this cake is just right for you! All of your guests will ask you for the recipe….

Recept / Recipe 

200 g smör / 7 ounces of butter

3 ägg / 3 eggs

3 dl strösocker / 1.2 cups of sugar

1 dl kakao / 0.4 cups of cacao powder

1.5 tsk vaniljsocker / 1.5 tsp of vanilla sugar

1.5 dl mjöl / 0.6 cups of flour

150 g 70% mörk choklad / 5 ounces of 70% dark chocolate

1. Sätt ugnen på 175 grader. / Preheat the oven to 350 F.

2. Smält smöret i en kastrull och blanda i alla andra ingredienser utom den mörka chokladen. / Melt the butter and add all other ingredients except the dark chocolate.

3. Lägg ett bakplåtspapper i botten av en form med löstagbara former (eller smöra och bröa). / Put a non-stick baking sheet in the bottom of a spring form (or butter it).

4. Grädda kakan i ca 13 min. / Bake the cake for about 13 min.

5. Låt kakan svalna helt. / Let the cake cool off completely.

6. Innan servering: Smält chokladen och bred på. / Before serving: Melt the chocolate and spread on top.

7. Klart! / Done!

Liten Choklad Chock – Small Chocolate Shocks

Dessa små bakelser är underbart söta och goda! Passar perfekt till fika eller efterätt med lättvispad grädde! / This small chocolate shocks are wonderfully sweet and tasty. Perfect as a coffee snack or for dessert with whipped cream!

Recept (10 små chocker) / Recipe (10 small shocks)

Kaka / Cake

100 g smör / 3.5 ounces of butter

2 ägg / 2 eggs

2.5 dl socker / 1 cup of sugar

1.5 dl mjöl / 0.6 cups of flour

4 msk kakao / 4 tablespoons of cacao powder 

1.5 tsk vaniljsocker / 1.5 teaspoons of vanilla sugar

1 krm salt / 1 pinch of salt

1 msk vatten / 1 tablespoon of water

Fudge / Fudge

1.5 dl grädde / 0.6 cups of cream 

1 dl socker / 0.4 cups of sugar

0.5 dl kakao / 0.2 cups of cacao powder

2 msk vaniljsocker / 2 tablespoons of sugar

50 g smör / 1.8 ounces of butter

1. Sätt ugnen på 150 grader. / Heat the oven to 300 Fahrenheit.

2. Smält smöret till kakan, blanda alla andra ingredienser till kakan och lägg i små pappers/ bull formar. Sätt in i ugnen tills kakorna precis stelnat på toppen. Dom ska vara kladdiga inuti. / Melt the butter for the cake, and mix all other cake ingredients. Put the mix into small paper thins. Bake in the oven until the cakes are firm on top, they should stay very soft on the inside.

3. Ta ut alla kakor. Koka upp alla ingredienser till fudgen och låt koka tills den tjocknat. Lägg på kakorna och låt svalna, sätt in i kylen./ Mix all the ingredients for the fudge. Let boil until thickened. Put the fudge on top of the caked and let cool. Refrigerate.

4. Klart! / Done!
