Almond Cookie Mussel Molds – Mandelmusslor


This recipe comes from my Grandmother’s mother, and has been passed down since then. The cookies are used as a mold for keeping cloudberries and whipped cream, and it’s eaten as a dessert. Although, we weren’t able to find cloudberries at this time of the year, and therefore we used raspberries instead. The dough is filled with both sweet and bitter almond, and the cream really goes well with that combination. When my great Grandmother used to bake these, the recipe wasn’t too strict. She used a mug of that and a mug of this, but over the years, a full recipe has grown out of it. You need molds to make these cake molds (ironically enough). The once I used are classic for these cookies, but really any kind of thin molds will work.


Detta recept kommer från min Mormors Mamma, och har passerat ner i generationer. Mandelmusslor är till för att vara en sorts tallrik till hjortron och grädde, och äts som en dessert. Jag kunde dock inte hitta några färska hjortron, och fyllde istället kakorna med hallon och grädde. Degen är gjord på både söt och bitter-mandel, och grädden passar utmärkt till denna kombination. När min gammelmormor bakade dessa, var det inte så noggrant med receptet. Hon tog en kopp av det ena och en kopp av det andra, men genom åren så har ett riktigt recept vuxit fram. Du behöver någon sorts formar till dessa kakor. De som jag använde är typiska madel-mussel-formar, men vilken sorts plåtformar som helst funkar!

Recipe / Recept

3.5 ounces of sweet almonds / 100 g sötmandel

10-12 bitter almonds/ 10-12 bittermandlar

1.2 cups of flour / 5.5 dl vetemjöl

1 egg / 1 ägg

7 ounces of butter / 200 g smör

1-1.2 cups of sugar / 2.5-3 dl strösocker

1. Preheat the oven to 390 F. / Sätt ugnen på 200 grader

2. Boil the almonds and remove the peel. / Skålla och skala mandeln.

3. Let the almonds dry. / Låt mandlarna torka.

4. Put the almonds in a food processor. Mix until it’s a flour. / Lägg mandlarna i en mixer, mixa tills det har blivit ett mjöl.

5. Mix all ingredients together. / Blanda alla ingredienser.

6. Push the dough out in smaller molds. / Tryck ut degen i mindre formar.

7. Bake for about 10 min or until a little golden. / Grädda i ca 10 min, eller tills gyllene.

8. Let cool, remove from the molds. / Låt svalna, tryck ut kakorna från formarna.

9. Serve with berries and whipped cream. / Servera med grädde och bär.

10. Done! / Klart!

    Your photos are very beautiful and those tartlets look delicious. I tried to bake them in mini pie forms and I could not get the tartlets out even though I sprayed the non stick pans heavily. Do you have any tips on how to remove the baked tartlet from the mini pie pans or which molds to use?

      I’m so sorry to hear that!! Were the pie forms in glas or porslin? Try using either mini pie spring forms, or aluminum molds. I do believe that aluminum disposable molds would be easiest…!

        I used regular aluminum type mini pie pans. I think I need to get the ones with a removable bottom and maybe use a little bit more flour. I had some dough left and made cookies out of it and they came out very tasty!
